Fried rice is a common delicacy enjoyed in most Nigerian homes,parties... It is pretty much easy to prepare and the taste is ... (winks). To prepare this dish, the following ingredients will be required:
Bay leaves (optional)
2 sprigs fresh rosemary (optional)
2 cubes maggi
1 teaspoon salt
1 teaspoon white pepper (substitute other ground pepper)
2 teaspoon curry powder (divided)
1 teaspoon thyme
vegetable oil
cup chopped onion
vegetables (bell pepper,carrot, peas, cabbage & sweet corn) all diced and chopped as the case may be
rice (washed) (Parboiled or Basmati)
Chicken,beef... ( marinated with ginger,garlic,salt,Maggi, thyme,curry...)
Add a litre of water of water to the marinated chicken and turn on your source of heat. Allow to cook for 20 to 30 minutes ( depending on the intensity of heat). Once the meat is well cooked, set aside and strain the meat off water with a colander. You may choose to fry or grill at this point
In another pot,add a little oil and allow to heat up. Add diced onions and garlic and allow it to fry for 30 seconds ( until it turns translucent). And the diced liver and stir fry, add the washed green beans and stir fry/cook, add the diced carrot and stir fry.... at this point,you can add some bouillon cubes and salt to taste... stir fry the mixture until it is almost tender. Add your green pepper, cabbage and dry ginger powder or fresh ginger juice and turn off heat after a minute.
In another pot, add the the chicken broth and add more water if needs be, add some thyme and curry( if you want that extra yellow colour). Bring to boil and add your Parboiled Rice ( note that the Rice and broth should be at the same level. Cover and allow to Cook. Set aside once cooked.
In another pot, mix the rice and the fried rice sauce in batches.
Et voila,it's ready. Bon appetitè
1) Do season your boiled rice base or use broth; water doesn’t work

2) Don’t overcook your rice. This is the first step to a disastrous fried rice. If the rice is overcooked and mushy, please just remake it

3) Day old rice works best but it’s not a must. If you have a particular day you almost always make fried rice, make your parboiled rice a day before and store in the fridge

4) Season your vegetables while they are chopped and resting, it helps the overall flavour of the prepared rice

5) It’s okay to like your rice a little on the yellow/green side, however you don’t want an overpowering curry taste. Use turmeric for color and curry for flavor
