The best way to keep vegetables clean and nutritious is to wash them adequately BEFORE cutting. Many thought schools believe washing vegetables after cutting them up causes them to lose valuable nutrients. And it's true. Just cutting or dicing some vegetables reduces their nutrient content, to further expose the cut foods to water increases this chance.

Should you stop washing your veggies altogether? The answer is no.
Harmful microorganisms can grow on the veggies even while still planted. Scrub your veggies under running water and drain before cutting them up.
Using a general chopping board at the market stall is not safe either. You have no idea what that board has been through!
