Hello,

Good evening.

Today, I'd be preparing what is called onunu. This recipe may be strange for people up north (not sure though) but it's a pretty common meal down south.

Kindly drop your thoughts as you go through this thread, please.

INGREDIENTS

1. Yam
2. Ripe plantain (generally, the quantity of yam should be fairly more than that of the plantain)
3. Scent leaves
4. Dried fish (or meat, if you like),
5. Spices (salt, pepper, maggi, onion, and ginger),
6. Crayfish
7. Clean water.

PROCEDURE

1. Wash your pot and other utensils with clean water.

2. Cut the yam and ripen plantain as desired.

3. Cut the ginger into tiny cubes; pluck, wash, and slice the scent leaves.

4. Put the cut yam and ripe plantain into the pot and add water to a level just above the yam and plantain.

5. Add your spices as desired, palm oil (a few drops but you can add more if you want).

6. Wash and add the dried fish.

7. Heat moderately for about 20 minutes.

8. Add the scent leaves.

9. When the yam and plantain are soft enough, remove and put them aside.

10. Allow the pepper soup to boil for additional 1 - 2 minutes.

11. Turn off your heat and get your motor and pestle ready.

12. Pound the yam and the plantain until a fine product is achieved. Add a little amount of palm oil and continue pounding until it becomes uniformly coloured..

NUTRITIONAL VALUE

According to the USDA Nutrient Database, there are about 118kcal of energy per 100 grams of yam. It is also rich in vitamin B6 (23%).

Aside from its high energy content, plantain has got about 2.3g of dietary fibres per 100g. Dietary fibres are important for bowel movement. As nutritionandyou.com put it, 100 g fresh ripe plantains contain 1127 IU or 37.5% of daily required levels of vitamin A. Vitamin A is an important antioxidant. It is also important for the eyes.

Scent leaves are rich in electrolytes (sodium and potassium) and vitamin A. Sodium and potassium are important for normal muscle contraction.

Can't really say I know the exact origin of this dish but it's pretty popular to the Kalabari people of Rivers State..
