Hey guys, today we bring you a popular recipe that would be incredibly important to include to your diet. Mixed vegetable with boiled plantain! This mix vegetable recipe is super easy to make... SUPER EASY!!! It's also an incredibly flexible recipe so feel free to use any vegetables to your liking. Ingredients Tomatoes (chopped and sliced)* Green Pepper (Chopped) Green Beans (Chopped) Onions (Chopped) Chopped Carrots Sliced Cabbage Chopped Chicken Seasoning Cube Groundnut Oil Blended Herbs White Pepper 1 tsp sesame oil Salt to taste depends on the sodium content of the vegetable broth Directions: Add water to your cooking pot and allow to boil. Add 2tsp of salt to the water and then add the chopped cabbage to the boiling water. Cover and allow to simmer for 3 minutes. This would allow the cabbage to get soft. Drain the cabbage and add a little salt. In a different pan, fry your groundnut oil, add seasoning cube and add the chopped onions. Add the chopped tomatoes and fry together with the onions. You can also add blended pepper. This is optional for those who like peppery food. After 3 mins, add the chopped chicken/beef to the frying tomatoes and onions. Add the blended herbs (ginger, garlic and celery). Add the green pepper, white pepper, carrots, runner beans, seasoning cube, a little salt to taste and lastly the drained cabbage. Stir the content of the pot together. You can serve your mixed vegetables with Boiled Plantain or you could eat with rice. *To make the cooking process easier we like to cut the vegetables according to their density/thickness so they all cook at the same time evenly. For example, thinly slice harder veggies such as carrots and vegetable stems. Cut softer vegetables like mushroom and bell peppers into manageable pieces but not too small.
