Garri powder is extracted from cassava and is a powder formed by crushing, dehydrating and drying cassava. The content of cassava root dry matter is 30%-40%. Fresh cassava contains starch 32-35%, protein 1-2%, fat 0.3-4.3%, cellulose 1-2%, ash 1%, vitamin C 30mg/100g. It also contains a small amount of vitamin A, vitamin B1, vitamin B2 and so on. All parts of cassava plants contain hydrocyanic acid, in which the leaf parts account for 2.1% of the plant content, the stems account for about 36%, the roots account for about 61%. And the skin has the highest cortex content, which is 15-100 times that of the fleshy part. The cassava root contains 30% starch, and the cassava dried contains 70% starch. It is known as the “king of starch” and is also a promising raw material for alcohol production.

Generally speaking, after pressing and dehydrating, about 75% of hydrocyanic acid can be removed, and the toxicity after processing starch is negligible. So the cassava that goes through these steps can be eaten directly.


Cassava is cultivated mainly in the tropics. According to the Food and Agriculture Organization of the United Nations (FAO), more than 90% of the cassava cultivation areas are located in the tropics. However, due to the wide adaptability of cassava, it has spread to within 30 degrees of the north and south latitudes. As long as the annual average temperature is above 18 °C, the frost-free period of 8 months or more can be planted.

According to FAO statistics, there are currently 102 countries in the world planting cassava. In 2003, the world's cassava harvested area was 1,721.875 million hm2, of which 11.125.373 million hm2 was Africa, accounting for 65%; Asia was 344.47 million hm2, accounting for 20%; Latin America was 234.144 million hm2, accounting for 14%. In 2003, the total output of cassava in the world was 187,765,489 tons, of which 100,73,306,000 tons were in Africa, accounting for 54%; 54,468,994 tons were in Asia, accounting for 29% of the world's total production; and Latin America was 3,151,732 tons, accounting for 17% of the world's total output; Oceania is 940,000 tons. In 2003, the average yield of cassava in the world was 10.8982 t/hm2, and the highest average yield in Asia was 15.8148 t/hm2.

There are 12 countries in Asia producing cassava, of which the output of the five major producing countries in 2003 was: 18.43 million tons in Thailand, 177.228 million tons in Indonesia, 7.1 million tons in India, 3,851.04 million tons in China, and 507,100 tons in Vietnam. Among the Asian cassava producing countries, the fastest-growing is Thailand, based on 1961, with a production of 200,000 tons in 1961, 15.59 million tons in 1998, and 18.43 million tons in 2001, 78 times in 1961 and 92 times. Thailand's cassava products are mainly dry and hard granules, and most of them are used for export earning. Although the starting point of Indonesia is high, its development rate is not fast. It was 11 million tons in 1961, 14.696 million tons in 1998 and 17.723 million tons in 2003. Its cassava products are mainly sold domestically. Production in Vietnam and China accounted for 16.3% of Asian production, accounting for 4.7% of total world production, but demand has risen sharply due to the rise of the starch processing industry. India's acreage is not large, but its yield is the highest in the world.

The production of cassava in Latin America is mainly concentrated in Brazil and Colombia, and the production of cassava in Brazil accounts for 71% of Latin America. Latin America is the largest consumer market for edible cassava. In addition to Brazil, most countries use cassava as traditional common food.

Africa's cassava production is concentrated in Nigeria, the Democratic Republic of the Congo, Ghana, Tanzania, and Angola, with production from the former two countries accounting for 49% of Africa's production. African cassava products are mainly used for rations.
