An overripe plantain is rich in potassium and antioxidants, which, according to livestrong.com, is beneficial in preventing or delaying cell damage in one’s body. So do not toss them out, put them to good use, in this case, plantain Pancake.

This easy pancake recipe is the perfect way to use your overripe plantains. Remember that the lighter you make the batter, the thinner the pancakes will turn out. Pancakes are a delicious food that undoubtedly brings up fond memories of childhood breakfasts or of slow weekend morning where breakfast isn’t a quick grab-n-go to get out of the door on time.

INGREDIENTS:
One over-ripe plantain
1/2 cup flour
Tiger Chilli Pepper
Tiger Cinnamon Powder
Tiger Nutmeg Powder
⅔ Cup water
One Teaspoon vanilla extract (Optional)
1 tsp. Sugar
Two eggs
Onion
3 tbsp. Vegetable Oil

METHOD:
Cut plantain, add to a blender and blend until it becomes a paste.

Pour out in a bowl.

Add the whisked eggs and then the rest of the ingredients and mix to a batter.

Heat a frying pan and lightly coat with Vegetable Oil.

Add a small amount of the batter till it forms a circle.

Allow to fry on each side for 2 minutes and then flip.

Viola… Our fluffy Plantain Pancake is ready!

Enjoy as a delicious snack with a chilled glass of Gloria Crème Liqueur or as a hearty breakfast with hot beverage.
