When people talk about Euro food, it's typically all about Italy and France. But Spain is actually more interesting. Spanish food actually reminds me of African and Caribbean food. Maybe you'll see why when I post some top dishes.
Fabada Asturiana - white bean and pork stew
Pisto - vegetable stew
Rabo de Toro - oxtail stew
Paella - seafood mixed rice
I think everyone knows this dish.
Cocido Madrileño - chickpea and pork stew
Arros Negre - squid ink seafood mixed rice
There's a lot more, but the board acts goofy. I also didn't include tapas because they're more appetizers, but they're very good, and there's so many kinds. Tapas are cool because they take something simple and delicious and crank it up, like a particular sauce or the quality of seafood or deli items.

Here's some lamb/mutton/goat dishes.
Caldereta de Cordero - lamb stew (hot seasoning)
Caldereta de Chivo - goat hotpot (sweeter seasoning)
Chanfaina - lamb stew (thick, rich, uses offal and pork)
