Gluten free bread is made with rice flour, potato starch, corn starch, tapioca flour, and xanthan gum.You will need: Brown rice flour - 1 Cup (125 grams) xanthan gum - 2 teaspoons (11 grams) salt - 1 tablespoon (5 grams) cinnamon - 1 teaspoon (2 grams) yeast - 1 cup (250 millilitres) water - 2 tablespoons (30 grams) olive oil . The ratio of xanthan gum to flour is 1:1 or 3:1. When mixed, the dough should be left to rest for 10 to 30 minutes.
