HOW TO MAKE NIGERIAN MOI MOI
Hey, it’s the weekend, and like you know, weekends are for trying out new recipes. This weekend we have something special for you and that’s MOI MOI.

Moi Moi also called (Mai Mai, Moin Moin, or Moy Moy) is a popular Nigerian dish that is traditionally made with peeled beans, vegetable oil, pepper, and other ingredients. It is usually steamed inside a pot using leaves (Uma leaves (Thaumatococcus daniellii), banana leaves, or Aluminium foil).

Moi Moi is a meal that has found its way to many occasions like weddings, birthdays, etc. It can be eaten alone or paired with other Nigerian foods such as Jollof/fried rice, white rice, Pap, custard, etc.
Here is a detailed step on how to prepare this delicious meal.

INGREDIENTS;
1. Brown beans
2. Diced onions
3. Cray fish
4. Bell pepper (Tatashe)
5. Habanero pepper (Rodo)
6. Bullion cubes
7. Hard-boiled eggs
8. Cooked minced fish
9. Salt to taste

COOKING STEPS;
1. Soak the beans in water for 1-2 hours. Depending on the nature of the beans
2. Peel the beans properly. Pour the peeled into a blender together with diced onions, bell pepper, habanero pepper and blend till it’s smooth.
Note; The Moi Moi should be ground to a smooth paste, if not the appearance and taste of the Moi Moi won’t be good.
Rather than soaking your beans for an hour or two before you peel them, there’s an easier way to do it.
(a) Soak the peeled beans in water for 15 minutes
(b) Pour the beans into a blender and add lots of water. Blend for 15 seconds.
(c)Pour the beans into a large bowl, pour enough water, and wash the beans.
(d) Sieve properly
3. Pour the blended mixture into a bowl and add crayfish, vegetable oil, bullion cubes. Mix completely. Also, add water to get a lighter consistency.
4. Grease the containers your want to use with oil. If you prefer using leaves, wash the leaves properly.
5. Pour the mixture into each container/leaves and add your egg and minced fish. Cover the containers.
6. Line the base of your pot with foil paper or the Moi Moi leaves. Pour water into the pot and allow it to boil.
7. When the water is boiling, place the Moi Moi into the pot and leave it to steam. At intervals add water so that the Moi Moi doesn’t burn underneath.
Note; Do not add too much water as it might get into the Moi Moi and ruin it.
8. Cook the Moi Moi for about 45 minutes or 1 hour. The cooking time of the Moi Moi depends on the container you’re using and also the quantity of the Moi Moi.
Take out your Moi Moi from the pot and allow it to cool before serving yourself. Enjoy!
