Recipes For Making Smoky Party-Style Jollof Rice In Nigerian.
Nigerian smoky party-style Jollof rice, There are various recipes for Nigerian jollof rice, but the fundamentals of a party jollof rice are one that has stood through the test of time. Parties such as weddings, grand birthday celebrations, baby naming ceremonies and the celebration of life (burial of someone who has lived a long and full life) are a huge part of the Nigerian culture.

This is one of the most delicious meals that can be enjoyed at all parties, also one of the peoples’ favorites.

For this recipe you’ll need:

3kg of rice
6- 7 Scotch Bonnet pepper (atarodo)
1 kg Red ball pepper (10-11)
1. kg fresh tomatoes or chopped tomatoes
600-gram tomato paste
3 cups beef/chicken stock
6 pieces bay leaves
500-gram onions
6 Garlic cloves
2 teaspoon curry
2 teaspoon thyme
15-16 Seasoning cubes
Butter/ margarine 100 g
Salt to taste

HOW TO COOK SMOKY

The first thing is to season and cooks the meat until tender.
You may choose to fry or grill afterwards (It may be chicken, turkey, or beef) Season with salt, seasoning cubes/powder, garlic powder, ginger powder, curry and thyme or rosemary and sliced onion.
Extract the stock and keep it for later use(Water extracted from the meat)
Blend the tomatoes, Redball pepper (tatashe), Scotch bonnet pepper (Atarodo), garlic cloves, and onions.
Turn the blended ingredients in a pot bring them to a boil until the water is completely dry.
In another cooking pot add the vegetable oil, add sliced onion and allow it to saute for about 2 minutes, then go ahead to add the tomato paste and fry for about 3 minutes.
