If it were me, I would leave out the tomato, curry powder, thyme, powder ginger, use fresh garlic instead.

Lightly batter the diced chickens, add diced pork sausage and since its stir fry- a Chinese dish, I'll add sesame oil and soy sauce(necessary for chinese flavor) and a little brown sugar.
