Process

Dice your cabbage, carrots, spring onions, green bell pepper, garlic and ginger

* Heat up your oil (I use coconut oil), add your garlic and ginger to fry a little, add your cabbage and carrot and stir properly, add your green bell pepper and seasoning to taste then allow to simmer for a short time so as not to over cook the veggies..

* Break and pour your eggs in a bowl, add your fried veggies and mix properly..... Dish this mixture in a moi-moi bowls/plates, cover it, place it in a pot of boiling water and cook for 10minutes..... Voila, your delicious egg moi-moi is set
