SCRAMBLED EGGS If you are like me and you are tired of boiled eggs or dry fried eggs, jump in here and lets have scrambled eggs. Scrambled eggs are different from the normal fried eggs in the following ways. Appearance and Texture It must not be crisp and dry. It must be mushy and creamy, looking sexy and almost looking like something to glaze inside your bread. Hello friends. How's your day going? I really want to appreciate those reading, sharing and commenting. That said, today's topic is very hard for me to discuss and I have had time to ruminate on it because it's a topic that is related to my business personally. However, I owe you truth on what I know and have gathered so far about it. Sausages which can also be referred to as hotdogs originated according to history in Germany and traditional, it is either grilled or steamed shaped minced meat. There are different types of sausages namely; * Chicken Franks(made from chicken, chicken fats) * Beef hotdogs * Pork hotdogs etc INDUSTRIAL PREPARATION Most hotdogs are prepared commercially by blending and mixing meat with different ingredients and salt. These can be an array of different ingredients especially recently that hotdogs are now popular in most parts of the world. Major ingredients include meats, spices, binders and additives which will be blended in a machine called VATS. This machine consists of different shapes and sizes of blades which will highly blend the meat including the tough tendons. After blending, the blended material is then forced through natural casing tubes and sealed. I said natural because it's casing is usually made from collagen or sheep small intestine. After this process, it is lined up and steamed,grilled or through any other preferred process. HOTDOG MYTHS, BELIEFS AND BENEFITS... As a chef who uses sausages frequently, I have been faced with different questions and statements concerning it. However, after studies, I realised though caution needs to be applied in some areas as most of the accusations concerning sausages are not well based on research and truth rather hearsays. Water Therapy I have always been inquisitive about this therapy because it is said to cure over hundred diseases including cancer and infections to the extent of placing myself under it for days. Nigerian Jollof rice and Concoction Rice It's a beautiful day friends and a sure day for jollof rice. I actually didn't want to write this post but I feel CONCOCTION RICE should be given the respect it deserves. Apart from that, it's one of the most popular food in my country. I'm going to formally introduce you to rice concoction and how it saved our lives then as Nigerian students and later on the Street. Concoction OR concocted rice has many names, the Ibos prepare it and call it "Beykay" This is the type of concoction rice done publicly with lots of spices that makes the aroma go far and wide but, most times, the taste is nothing to write home about . This local twist of jollof is not made to please the taste except maybe when prepared by specialist like me (that's because any food I prepare is always sweet no matter what! It's a gift lol), it's made to QUENCH HUNGER. I'm talking about student concoction rice eaten when the going gets tough and the tough is trying to not die while going. It doesn't need all the paparazzi of beef or chicken stock, carrot and the others. The recipe is simple * Groundnutoil If we don't have the money for groundnut oil, we will use olive oil (popularly called anointing oil) given in church, * Borrowed rice or contributed rice it's always like this: there is contribution between who has rice, who has oil and who has kerosene for the stove to cook. * Maggi * Tomato paste * Ground pepper Notice I didn't mention meat, chicken or egg?!!! That's because there is ALWAYS NONE. Preparation Nothing chef like because the gas in your stove is so little that if you delay, it won't finish the cooking. Just pour everything in at the same time after washing the rice and all of us wait around the rice. Do I hear you say why? Lol.. Kk, that's because immediately the rice starts smelling, there are some bigger and stronger boys (wont tell you their names in the institution) that will just show up like magician and carry the joint contribution concoction away. So this is what we deviced: As the rice is about to get done(About 5minutes to go) WHILE COOKING (STILL ON FIRE), we will congregate around and eat it like that. Yes! You heard me right. Hot Like that!!!! If you can't, you go hungry... So get used to it Lollllllll.... It was fun!!!!!!! That was life at school then However; if you are preparing it personally, pour all at once and COVER! Jollof Rice Do I really know who invented jollof rice or let's say do I really care? Anyway, what I can remember about this awesome dish is that we only eat to our fill on celebration days for example Christmas, New year celebration etc and this made jollof rice highly placed in my heart while growing up. Do you think you are a good cook? Let's go over this and you might find out if you are. I decided to write on this topic because I was recently enlightened to what I didn't know. Growing up staying beside my mum which happens to be a very good cook, I learnt naturally basic cooking skills which I thought everybody must definitely know. However, I realise this to be very untrue. This, I was told, is because some people didn't grow up with a mum, some were raised by single parents and I have a friend who told me they were never allowed to cook even as girls; only their mum cooks for their dad and family. Then, I realised, the things I have got so freely wasn't so common after all. So, I have decided to put some out for you guys to see. 10 kitchen wisdom tips you need to be a good cook. 1. Before attempting any dish, Be sure to know all the ingredients required and also be able to differentiate which are compulsory ingredients and optional. For example, you cannot decide to prepare Nigerian ayamashe (local rice sauce), then forget to procure iru (locust beans) at the market or prepare Jollof rice and forget groundout oil or even rice itself. 2. Stay away from dishes whose ingredients are too scare or too hard to find. This cannot be over-emphasized. This is very important in the case of preparing continental dishes and when you want to cook to impress 3. SPICES According to the name, spices are meant to improve the taste and aroma of the food and not overcome the food's major essence. So, keep it simple with spices. It's better to cook a simple delicious meal than one that will upturn the stomach. 4. UNDERSTANDING SPICE MIXING Spice to spice interaction and spice-food interaction. For example, some spice have strong aroma and tend to over-ride all other ingredients we have thyme and rose Mary in that section. About saltiness, what you should understand about grilling UNLIKE boiling is, however it taste when you are marinating or adding spice is what the end product will surely taste like... How do I mean: If you tasted the fish before grilling and it's oversalted... It will definitely be after grilling unlike boiling where you can add more water or the cooking process might balance the salt. |

So inbox me for anything food or get to me here. I will reply) Vegetable Chicken Curry Sauce Although, it is not a new discovery, however, this sauce is on its own lane. It can also be called chicken gravy or vegetable chicken gravy depending on whether you decide to add some veggies. It is very sweet and goes for almost any carbs dishes like potato rice etc you want to prepare. INGREDIENTS I promise to keep it simple and original * Ground curry * Bell pepper- Green,yellow, red °optional (added if you want to make it a vegetable) * Carrots * Seasonings * Groundnut Oil * Salt * Cornflour * Chicken stock * Chicken * Hotdogs/Chicken Franks * Ground black pepper * Chopped Garlic * Chopped Ginger PREPARATION Prepping (15mins) Before the cooking starts, there are a few things you have to have to do. 1. It is said in my culture that "what experience sees sitting, young ones cannot see even if they climb a tree". So recently, I have been following experienced chefs to their prospective events and I have learnt a lot. The one that baffles me a lot was the fish grilling technique and marination my eyes was opened to by a culinary senior of mine. What I do formally is to marinate my fish and grill. Simple. However, I was exposed to a simpler but very lovely method. I will be using the Croaker fish as example. In this method: there will be sauce preparation which is just pepper stew. SAUCE Ingredients: * Habanero pepper * Ginger * Garlic * Onions * Red bell pepper (tatashe) * Seasoning * Salt *Groundnut oil Preparation: Put oil on fire, blend coarsely the pepper onions and spices or better still, pound them so it retains it's major flavour. When oil is hot, pour your pounded pepper, add your seasoning and salt and allow to fry until done. Pack into a bowl and seal. FISH PROCESSING * The fish is prepared by de-scaling (removal of all the scales) * Incision is made along the belly line (The coring process) and the intestines are removed. * The fish is then washed and cored (This is when the surface of the fish is cut slightly to allow the spices used to penetrate. It aids marination) After coring, the fish is then soaked in marinade or brushed with marinade which is usually a combination of ground dry red pepper, curry, dried ginger, oil, thyme, powdered onions, barbeque sauce, salt and seasonings. * This is then covered in bowl and stored in fridge to marinate for about 4-5 hours... It's amazing that intercontinental dishes though delicate, are the simplest to make. You only need to switch your mindset from the normal pepper stew that is traditional prepared to some other spices, thickners, sauces and marinades. For example, cornflour, sweet chilli sauce, soysauce, veggies etc SHREDDED BEEF SAUCE This sauce is what I love ordering with any of my dishes whenever I'm out on an event because of it's richness and the alluring black colour. That is why immediately I registered for Chinese culinary class, it was the first question on my mind to ask the tutor RECIPE * Onions * Green Pepper and yellow bell pepper * Carrot * Soysauce (dark) * Corn flour * Beef stock/chicken stock (Natural unprocessed beef and chicken stock) * Seasoning * Ginger * Garlic PREPARATION There are three simple steps to take; 1. Prepping the veggies and meat 2. Sauteing them 3. Preparing the sauce Prepping (veggies and beef) * Wash and Cut the carrots, meat, peppers and onions in strips. * Season the meat with curry, thyme, seasoning cubes, garlic and ginger powder and leave to sit for sometime. Sautèing Sautèing is a process of lightly frying and stirring food in little oil. So you saute the veggies first for about 2-3 minutes. Pack off; then you do likewise to the meat but for about 5 minutes. It shouldn't be deeply fried but the colour should be out. 3. You see companies getting big time jobs on social media and you are wondering how it came by. You see a start up company blowing out in their first few months and you have been there for years struggling and getting depressed. Today I will be writing probably my most serious post and the truth straight from my heart and from experience. I problem have done over 100 deliveries and events put together in my few years of business and with my calculation fed over 40000 mouths in my day to day deliveries, events and kitchen sales. How To Get Business Contracts Before I jump to it, I have some few things ringing in my heart I would love to say. As an entrepreneur (business owner), You are different from an employee who has a stipulated everyday step by step activities laid down by his employer and at the end of the month collect his or her wages. As an entrepreneur, Your idea is your responsibility. You can't afford to be weak in any area be it account, execution, strategy or be it physically, emotionally or even Spiritually! There is a law of natural selection going on everywhere and everytime starting from Sperm-egg fertilization stage till you got to where you are. The kill or be killed attitude. It's real. You stand no chance if all you do is to grovel especially in business. That said; let's start! THE PROVEN STEPS: Excellence mentality If I were to be writing this post 5-7 yrs ago, I might have ended with this point I'm about to make; However, This is the year of "what you see is what you get" and not what you expect. It's a time when people don't want to associate with you if they "sense" or see inadequacy, dirt, mistakes etc This area was a hard one for me personally maybe because of my personality. I used to find it hard giving attention to details. My strength then was, as a Chef, giving them a taste they will get addicted on However, these time, Many wont eat what they can't share on the social media. So, my summation is this; It's OK to start small however in your starting, be as excellent as you can possibly be. Pay attention to little details and you are sure to get contract and even recurring ones. You know why? The client might not know the how of your business but great clients always spot the extra work you put starting from your dressing to your presentation. Go beyound yourself. NEVER BE SHY TO CONNECT Let me make it simple: A shy person will never make it in business (Sorry if I'm too direct). However, I have said it. Infact, in almost anything. This can't be over emphasized because you can only connect and meet people when you are confident of yourself and what you have to offer! You must never be shy to admit you need what you need. You must be vocal and confident. Understand and know that Popularity is Money!!! That is why most business owners becomes their business, They dress it, look it and even add it to their names. Tools to connect Offline, you have your business cards, flyers, billboard adverts. Electronically, you have TV and Radio ads and finally, the most powerful one now is the social media. For example, going through the stats of my blog, I see readers in United state, China and some other countries I have never heard of! There are also people who are brands themselves all because they trend on being beautiful and they get paid for it in huge sums! Simply stating, the more people you know, the more business you get. BE MENTORED (godfatherism) This is not connecting to people but to a very powerful individual who is considered to be a success in your line of business. Someone like an idol that is well connected. This doesn't guarantee automatic success but it makes your challenges easier to bear. Now, understand that it is not easy to get a mentor hence your need to be confident of yourself to seize the opportunity when it comes. Secondly, some requirements might be demanded from you, things which might make you have second thought. However, if you are able to land a powerful one for yourself, they might turn a journey of 5years into 5days and open doors of opportunities for you. Diabetes Hello guys, I feel the compulsion to write about this killer disease because I feel it is the singular most ignored disease I know. Also, it became personal when someone close to me developed a type 2 Diabetes. I feel a mass sensitization should be set up for the dangers of diabetes because most people that are insulin deficient don't even know they are. If they are aware of their condition, a preventive measure would be set. Personal discipline would be possible because it's really not easy closing your eyes to all the desserts, pastries, sodas being produced today by chefs including me. What is Diabetes and how can it be controlled? Diabetes is a set of dangerous complications that results from high concentration (presence) of glucose (sugar) in the blood that cannot be converted or used due to "no or not enough" production of Insulin by the Pancreas. I would love to continue on the types and forms however, this information can be easily gotten even the dangers are well pronounced; * Diabetes can affect almost every organ in your body.. the eye, ear, kidney, heart etc. Just name it. Even your body Soldiers and wound clot is almost reduced to zero. It's a killer!! Treatments known. Since 90% of diabetes patients are type2 (These are the people that, though produces insulin, however not enough for the body to use), the common treatments are: * Good diet * Exercise * Insulin injection * Medications It has been noted that just following this plan, any major damage or complications can be avoided. In the developed countries, a list of foods can be given and followed easily. However, in the 3rd world countries, countries that survive on less than $10 a day, Many things could go wrong. To feed is an issue not to talk of to maintain a diet and most foods especially Nigerian major foods are carbohydrates that still end up producing glucose in the body. So what are the diet you can easily get and afford that will keep that sugar level down to almost zero and give you a good life? Affordable and cheap diets or inclusions that helps reduce your sugar *Note that the post is not written for you to STOP eating carbs, it suggest that you lower carbs and increase or include these other foods 1. Vegetables: This is the cheapest form of vitamins you can afford. It can be grown personally and it can be gotten at a very low amount in the market. Since the point is to cut down Carbohydrates, Having more of vegetables in your meal than actual carbs like rice, wheat, processed cassava will help balance your food. We have different types of vegetables and some referred to be herbal. For example, Bitter Leaf. * Recipe: To cut down sugar, Process Bitter leaf by rinsing it, then soaking in water and rubbing it repeatedly and squeezing . Repeat this process until you have squeezed out over 80percent of the bitter content. Then, spread it out on a tray and let it dry. I know by now, many things are running through our minds; For some, re-branding while for others, maintaining and upgrading their company. While all these are necessary, if you are an aspiring chef hoping to make a difference this year, you need aforemost CHANGE OF MINDSET Gone are the days where you only make money by preparing food at an event, work in a restaurant or as private chefs. You cannot afford to maintain your normal routine and hope for your financial level to change. You have to follow in the new trends; For example; * Online Training through social media like whatsap * Start a food blog or You tube channel * Get more certified and become a food consultant or food review specialist etc * Create ideas that will trend and make you popular and known for what you do. LEARN THE MONEY MAKING ASPECT OF THE BUSINESS Let me make you understand that so far you have taken the decision of not working under any company in which you would have been given a set objective or daily routine as your boss deem fit, you have automatically made yourself a business man. You don't have to wear suit and hold a briefcase. You not only have to learn marketing skills but you should also attend business seminars and probably a business school. This is because being skillful as a chef is not enough to make you wealthy; you might end up being the best worker. You need to understand how to grow and structure your company and these goes beyound mere smartness. You need to pause a bit from concentrating too much on making the best stew or pastry and shift focus to issues like branding, the art of negotiation, customer services, online and offline marketing, outsourcing. This part (sorry to dissapoint you) is a little bit more important than making the best food. The major issue is the starch in the rice. Let me teach you another method. STIR FRY JOLLOF * Perboil your rise for like 7-10mins. Make sure the rice is not soft but almost soft. * Drain water away and probably rinse one more time to wash away the starch * Prepare your sauce: put oil on fire, pour in your pepper, bay leaf curry and all like you want to do fried stew, season it... Once it's done. * Pour your rice in, don't stir much just mix lightly, put little more water and cover. * Leave for another 5-7 minutes and stir well... * Thank me later. Let's start. Coca-Cola, which is one of America's fortune 500 companies is unarguably one of the most successful beverage drink company in the world; if not the most successful. They have almost perfected or probably perfected one of their goals which is coca cola product being on every lips in the world. Narrowing it down to Nigeria and Africa generally, it's safe to say Coca cola brand has conquered Africa as they are the most consumed in Africa especially in Nigeria where the 7up company were always in fierce competition. However, there is this Mentality in Nigeria that Coca-cola brand are for the rich while the 7up products for the "small boys" (Only God knows how that was implanted in our minds as kids). The dominance of Coca Cola company continued unabated until 2016 when rite foods introduced bigi beverages which came in Cola, orange flavours and bottled water. RITE FOODS I won't go into the details of their company as focus is on beverage. "In their words, they realised sausages must be consumed with drinks; thus, their decision to start making drinks". STRATEGY (THE GENESIS) The first distinctive move by the rite food was to increase their bottle size to 65cl. Probably because they are proudly a Nigerian Company, they understand that Nigerians loves quantity. These, in the beginning, definitely got Nigerians interested and curious. While some refuse to give them a trial taste, Many including me decided to buy all brands. Conclusion was, from my perspective, that they were trying to hard to please. This is because the beverages was too sweet and too harsh. So many went back to Coca cola products as size alone seems not to be enough. OPPORTUNITIES AND OPPORTUNIST This went on for some time before the Nigerian economy went downside and the Coca cola company and 7up company decided to increase the price of their 50cl bottles from #100 to #150. Immediately this happened, coca cola quickly revealed another size of coke and fanta called the SOLO BOTTLES which was sold at #100, so their bigger bottle was sold at #150 (Note that both Coca cola and 7up company have increased their 50cl bottle to 60cl because of the increase in their prices However, bigi beverages retained their size and their price) This uncomfortable adjustments by both Coca Cola company and 7up Company have already forced some Nigerians who earns less than 2$ a day and have big appetite to FOLLOW BIGI COMPANY. Hello guys, I can't actually believe I'm writing this but really, if this blog is not about helping lives and actually solving problems, then, there is no reason for it. I will include my own experience because I passed through it and I knew a lot of students that pass through this and because of it, became terrible monsters in school while believing they had good excuses for their behaviours. Although, I was from an averagely well to do family, there still came sometimes where I couldn't even afford a day's meal and you wonder how you will read and pass when your stomach is empty. By the way, you should know that lacking money or not having anything to eat in a far away institution from home is NOT an excuse to perpetrate evil. Some join cultism, engage in stealing and real robbery, some girls sell their bodies while some became internet fraudsters. Why do that when there are sure ways to making sure some of your most vital needs are met. Let's discuss some; 1. SAPIOSEXUALITY: I didn't even know there was a word for this until I saw it somewhere. Sapiosexuality is when a person discovers he or she is attracted to intelligent people. I'm sapiosexual; I love intelligent guys and believe me, almost 80 percent of ladies and many guys are too. Being intelligent in a school is very precious because it can afford you a good life. However!! You can't stay in one corner and be forming secret genius. You have to let it show. Once in my 200level, I decided I was going to be taking my course mates tutorial on things they don't understand anytime class was without lecturers. I discussed with my class rep and he was like, why not? For the moment it lasted, I was well attended too. A lot of guys will invite you to help with assignments and even appreciate you with some sums. Ladies will come around and sometimes bring delicious foods. Must I complain I'm getting tired or hungry? Say no more... Food will be flying.. The funniest thing was, I wasnt a genius. I just read when others are not reading! 2. JOIN A FAMILY: A good church, mosque or whatever your religion is, Student union or select good friends. (Be part of a good family). I will never forget when I suffered and was hungry for days. When I finally let out to my choir coordinator, He scolded me and his exact words were: Why do we say we are one family of God if we can't confide in each other? (I hated asking then) Select a leader in the department you join to talk to. Don't die silently. Your Blood relations are not supposed to be your only family... 3. Humble yourself and start a small food business ( it is impossible for you to be selling consumable products and be hungry). There was a time when my business was suffering, sales was low and I was hungry. It got to a stage, I made one shawarma for myself and I ate or maybe 3 lollll.. My business didn't die because of that. I lived to fight another day. 4. BE A GIVER: To say the truth, it's not every time you will be hungry or not have enough, God is always faithful. Some few times, abundance will come. Save but don't forget your neighbours. Be known as a giver so when you need help, you will be helped. You will not be seen as a fraud, a cheat and lose your self respect and integrity. 5. Find a school daddy, mummy, aunty, uncle or whatever it is called these days. If the tough cannot go on again, they would find a way. Sometimes a very strong bond is formed and they care excessively for you. They will point you to a good direction, give you priceless information and make your school life easier if you get a good one. So, I fault nobody if you don't know that some of your actions are responsible for the typhoid, diarrhea and few of life threthening diseases you suffering or people are suffering; How do I mean? A good example is thyphoid Mary that killed thousands of people because she was working in a cookie company where she gets to handle people's food while having a resistant strain of Salmonella typhii (thyphoid). So let's get started: CROSS CONTAMINATION This is defined as the introduction of HARMFUL BACTERIAL from uncooked foods to cooked foods. This causes food poisoning and can kill especially in the case of cabbage, carrot which are consumed raw. Most houses always have one refridgeration system thereby they tend to store Cooked food product with Uncooked food products together. For example; placing cooked, grilled or fried meat beside raw meat in the same fridge. It's bad and there is something called cross Contamination that will happen and can cause you to be very sick. So stop storing Uncooked poultry or meat with cooked foods or vegetables. It is harmful. HALF ONIONS Even though, claims are not 100 percent proven, what is proven is the fact that onions are great absorbent. They attract many negative substance in their sorroundings including bad odour; So using this same remaining onion the next day on anything can really lead to food poisoning. However, onions can be actually stored in airtight containers for probably 7days but it is safe to say "when you cut an onion, finish it". To be safe is better than to be sorry. OBESITY, which is the leading disease that is preventable or treatable, is the addition of excess fat to the body till it starts making the body malfunction. It's the source of uncountable diseases from artherosclerosis to diabetes etc Do you want to know if you are one or coming close? Simple! Divide your body weight against your height. For example, I'm 90 by weight and 6ft by height giving us 15 by obese factor. 25-30 is the range of obesity. So let's say I'm a bit far but caution needs to be taken. What makes FAT so hard to eradicate? Fat has so many uses in the body. Infact, without the normal body fat, the body might suffer different complication. Before I let you into the reason fat is hard to lose, let me share their functions with you. Some of the functions of fat in the body are; 1. They are heat absorbers. They are located around most organs like kidney, heart etc because their work produces heat and something needs to be done to absorb it 2. They store up in the body and get converted to energy and nutrients when the body is not well nourished . This is why people lose weight when fasting or are in places where there is no food or water. Now let's go to the reason we are here; HOW TO BURN OUT FAT WITHOUT TOO MUCH EXERCISE Note: These are not for people who doesn't want to put in the work and discipline it takes. If you are one, please stop reading! Also, it took you several months or years to gain up the weight so don't expect a one week solution. It takes a process of diligently coming down over a period of time and these have no side effects on the body. Measures to take to lose fat without or with less exercise 1. (That's it majorly) Functions Of Water Therapy From experience, it will kill your strong urge for food, junks and sugary foods. You eat less. Since it has been researched that the major cause of obesity is food, taking water will cut down the amount of food you take and still make you feel filled (Not hungry). 2. STOP BEING SEDENTARY Even if your work calls for it, always find a time to move around and expend energy. Make sure you take any opportunity to walk around. Make sure you sweat in a day. Yes! You can call it exercise but it is light exercise. Make sure you are not seated in a place all day. Don't be lazy. Engage in skipping when less busy, go on a walk and meditate, intentionally, clean your house, wash your car. Do something that get your blood moving fast. Engage your self in judo classes, dancing class, community service or any sport you love just for the fun of it. As you are doing this and enjoying it, you are burning off fat. Just REFUSE TO BE SEDENTARY!!!!! 3. DITCH FRIED FOODS; DO GRILLS If you are so into fried foods, you can try using non-cholesterol oils however if you can, dump foods with high cholesterol. Remember, we are on a journey and determination helps you do this. CHOLESTEROL (A short summary) Cholesterol is a fatty substance made by the body to produce some hormones and maybe vitamins. It's very essential in the body However, too much of it will for plaques around artery wall thereby shortening the space blood is passing.
