I made another set of banana muffins today. They are so moist, moist all through this time. Thanks so much @Cococandy.

Thank you so much for the advice, with these, next batch will be better. It's actually delicious. My children enjoyed it.

1) Add a cup of plain yoghurt, sour cream or apple sauce for next time to keep the whole muffin including the top moist.

2)Don’t bake in the top rack, bake in the middle rack.

3)The moment a knife or toothpick comes out clean, it’s done. It might look like it isn’t but it is. Bring it out immediately. Don’t let it cool in the oven, dries it out.

Yours look delicious still.

Made Banana muffins today with really chilled fruit for the hot weather. The muffins top came out so hard. What can I do next time to make it moist all through. This is my first time though.

First of all, whisk the bean paste in such a way that it incorporates air.

Secondly, the oil used for frying should not be too hot and don't put your bean paste too early. It will soak a lot of oil before it gets done.

Lastly, monitor it constantly so that you get something close if not better than the Akara I made.

Airfryer does not need oil to fry. It fries with heat too but much healthier.
