please the water leaves, is it just to wash with cold water and cook?

because i cook my water leaves without water for few mins when i am cooking it with anyother leaves to drain d water to avoid a watery soup b4 adding it to other ingredients

Edikaikong soup is a mouth watering nutritious vegetable soup, native to the Efiks of Cross River and Akwa Ibom states in Nigeria and one of their most richest and popular soup recipe.

This delicious soup edikaikong is made with a generous amount of proteinous ingredients which makes it rich in taste and flavour.

Edikaikong is usually prepared with a combination of two different vegetables; Ikong Ubong/Ugwu leaves (pumpkin leaves) and water leaves but in the absence of fluted pumpkin leaves and water leaves, Spinach and Lamb lettuce/Mache (Valerianella locusta) can be used.

Ingredients For Edikaikong Soup
* 1kg Pumpkin ( ugu)/Spinach leaves
* 200g Water leaves
* 500g of assorted meat (cow tripe (shaki), cow's skin (kpomo),
* Stock fish (optional)
* Smoked fish
* 250ml palm oil
* 1 cup Periwinkles (optional)
* 2 tablespoons ground crayfish
* 2 Seasoning cubes
* 1 medium sized onion
* Ground pepper to taste
* salt to taste

Preparation For Edikaikong Soup
Wash the vegetables clean and chop into tiny then set aside. Wash and slice the onions as well and keep aside.

Wash and cut the assorted meat in bite-able sizes. Clean the periwinkles, dried fish and stock fish and set aside.

Cooking Directions For Edikaikong Soup
Place the assorted meat and stock fish in the pot, add a little water, the chopped onion and one stock cube. Cook until both the meat and stock fish is soft and there is just a little liquid in the pot.

Now the meat is done, add the dried fish and periwinkle; add the palm oil, the ground pepper, one seasoning cube and crayfish then leave to boil for about 10 minutes.

Now add the water leaves (or lamb lettuce) and leave to cook for 3 minutes. Then add the Ikong Ubong /Ugu leaves (pumpkin leaves) and salt to taste.

Stir thoroughly and leave to simmer for 5 minutes on low heat and your Edikaikong soup is ready. Enjoy!

Edikaikong soup can be served with Pounded Yam, Eba, Akpu, Wheat meal, Semolina or Amala.

i think this is also good, apply for study leave though not all coy approves that but if there is provision for such, make use of it and if the pasture is greener abroad, u will tender your resignation with ur employer

It depends on u. Do u want to gain knowledge and have master's because u wanna be more employable. If u are afraid of job, den try to apply for US or Canada schools. When u finish, u can b given 2 years permit after your school. However, u will sign a bond with PTDF you will come back after your studies.

Well if I were in your shoe. I will go sha like I did during my time. The experience and finances you will gain from the scholarship outweighs it. You can also apply for study leave without pay in your current job. Well it all depends on your personality sha. Just try and make an informed decision because you are solely responsible for the outcome.

what do u mean 'work for ur own happiness'? undecided even if u are a loner, u cant be happy for a year w/o feeling down atimes not to talk of when u have a companion, it's obvious they have gone thru so much but d end is d joy, they are celebrating 50yrs, do u know what dat means? congrats mama and papa, no matter what i pray i spend more than 70yrs with my hubby

I can't find the old post where we once discussed the low IQ of Nigerian girls these days and i remembered the girls fought back with venom on that one.
It's almost impossible to find a girl that can read a book cover to cover, most girls can't even hold a decent conversation for 5 minutes unless you're talking about Davido or ToNto Dike.
They bring no value whatsoever to the life of a man, all they have is a pretty face and some not even so pretty.
The rate of female ignorance in Nigeria has resulted in Multitudes of pretty faced girls with no personality .
Most thinks all that men needs is just sex which shows the standards they've got.
How can these idiots raise the next generation of leaders ?

Sex is soo easy and cheap these days you can get nuts reloaded for just 400 Naira.

I pity men that would marry these women.

To some extent, you are right understanding those are the categories of girls you have seen or met

but when you meet the real women of virtue and substance, you cant but appreciate them because they have got the best brain in the world

good things are not found every where you know? But trust, there are very brilliant, beautiful and intelligent girls out there
