I graduated in 2014 and was subsequently mobilized for service in 2015. Upon mobilization, I did NYSC online registration and was issued call-up letter but wasn't able to participate in the camping exercise. It's been over 5 years now but I'm still under 30 and would want to undergo the scheme now.

Please does anyone know what process I have to follow in order to join this November 2020 batch

Can't go with this batch. You have to do revalidation when the next NYSC registration starts. Your age is not a problem even if you are above 30 in as much as you graduated before you got to 30.
