There is not a single way of applying for jobs via email. In some cases you can just attach your CV and type the job position on the subject bar say for instance "Application For Inventory Officer" then you send.
So it all depends on the instructions on the body of the job descriptions, you tailor your mail to what the potential employer wants.
In some cases they will either ask you to paste your cover or application letter on the body of the mail and in other times to be sent as attachment.
Now when you are asked to attach CV and Cover Letter, it is best to include both as a single attachment unless it is stated that you should send both separately. In a case where you send the CV and Cover Letter as a single attachment, then you would need to comment on the body of the mail in this manner below
"Dear Recruitment Manager,
Kindly find attached my CV and Cover Letter in a single document as requested"
