Turkey just came out of another 3-week long lockdown and reverted back to the partial weekend lockdown. This is a bad time to come here especially if you are hoping to get a job. But of course, you can apply for admission into postgraduate programs offered by some private institutions, in which case you may earn some money from teaching assistantship duties. But as you may understand your Bachelor's should be good. If you would consider this, surely we can talk.

Turkey is not in the Schengen area, so if your question is regarding moving from one country in the Schengen area to another, then it's not possible. I have never applied for a Polish visa, so I am not sure about how easy it's to get one from Turkey.
