Ofe Nsala is a delicacy peculiar to the Igbo tribe of Nigeria, especially the people of Anambra state. Ofe Nsala is known as white soup because palm oil is not used for the preparation, unlike other traditional soups.

While it is traditionally made with catfish, one can also make use of chicken as in the case of the recipe below:

Ingredients
Chicken
Small sized raw Yam cubes OR Yam Powder
1 handful chopped Utazi Leaves/uziza
3 tablespoonful ground Crayfish
1 medium chopped onion
20 g smoked/dry fish
3 medium yellow pepper (habanero)
2 Stock/Seasoning cubes (maggi, knorr etc)
Salt

Method
Properly wash the chicken, smoked and dry fish and set aside. Season and cook the chicken with the dried fish, adding onions, seasoning cube and salt to taste. Cook until done.

Peel the yam cubes and boil until soft, then pound to a smooth paste, using a mortar and pestle.

In the absence of a mortar and pestle, you can place the cooked yam in a food processor/blender, add a little hot water and blend until smooth.

Now add the yam paste bit by bit and leave the soup to cook until the paste is completely dissolved, and the chicken is well done. Now, add the pepper, crayfish, and smoked fish

Finally, add the utazi/uziza leaves, taste for salt, and simmer for 30 seconds.

Who told you Ofe Nsala is peculiar to Anambra state? Did you do any research to arrive to this.
In fact , Ofe nsala originated from Omanbala areas , the Anambra riverian areas and Asaba Delta state....Its Anambra because it's cooked with coco yam. Any soup cooked with coco yam belongs to Anambra because with love our soups to be very thick.

At all. I think it is peculiar to delta. How many Anambra parties do u see them serve that?

Stroll down to delta especially delta north. The best peppersoup is made by kwale people. I regretted not learning it from my kwale friend.
Cc.Poanan

Kwale are not Igbo unlike our Enuani blood. Kwale cook like Uhrobo and Esan.

As far as I know Omanbala areas and Enuani cook ofe nsala the best...ofe nsala is usually cooked for nursing mother's due to its richness if ingredients.

Imagine the boast. How many communities in Omanbala cook soup with Cocoyam? Even the Uziza leave does not grow in that axis. Maybe you are mistaken Nsala soup from pepper soup called Ji miri oku given to pregnant women. Yam pepper soup is what pregnant women eat not Cocoyam.

Now listen.
Ofe Ede
Ofe Oha
And Ofe Nsala are mainly cooked from Ikwerre, Aba to Orlu up to Anambra south. Nsala is even celebrated in Orratta as a festival.

The soup that dominates Omanbala is Ofe Onugbu. Oha and Uziza leaves and seeds are rare in Omanbala/Aguleri.

Oga , stop embarrassing yourself. Ofe Ora is cooked with ede and Imo/Abia doesn't use ede. They cook with achi which makes the soup watery unlike us.

Onugbu is cooked with ede and we all know you guys don't know how to begin to cook Onugbu...Onugbu is Anambra kponkwem due to ede.

Anambra never used to cook ji mmili oku....its Imo and Abia culture. We feed our nursing mother's ofe nsala which we use yam as thickner. Everybody knows Imo love watery soup like your ofeowerri. Anambra people are famous for our thick soups.

Of course , you know we own ofe akwu , nkwobi and isi ewu.

My wife is constantly teaching Imo and Abia women how to cook " ofe Anambra" according to them. That's how I know you guys don't eat what we eat.....lol

Imo and Abia cook ofe Owerri, Ukazi and Utazi....i have two Anambra guys who married to Imo ladies and usually mock their wives Imo soup.

Uziza might be rare in our areas but we will always cook our food the Anambra way. We don't cook ofe Owerri or Ukazi soup because we don't fancy them....every Igbo mama put cook Anambra soups.

You don't have to drag everything, bro. Give Anambra some credit .... We are blessed people in many ways which all Igbo gain from.

Aba and which Orlu? cheesy. Ofe Nsala is an Anambra and Enuani soup. Infact I can say it's an everyday soup in Enuani area .

That white soup (ofe nsala) is one soup I want to learn so I can always prepare it for my wife anytime she isn't strong or fit to be at the kitchen
Which is how every nwoke ought to be. Your wife can’t be bedridden with Covid or newly-returned from the hospital and you’re demanding ofe after ofe (and eventually rice) from her.

You don’t even need all these ingredients for ofe nsala either. There’s a fine line between nsala and pepper soup and you’ve definitely crossed it (as tasty as that soup may be).

Any obstacle other than fresh catfish will turn it into pepper soup and so will the likes of uziza and uda. The ingredients I’ve emboldened are literally all you need.
