it's a mix of corn meal and flour that is used in making the cake. So the taste and texture and very different from your typical 100% flour cakes. And the baking the is pretty quick - 20 minutes to less than an hour. undecided

If you slap some quality cheddar on a piece of cornbread, you'll be happy. Cheesy corn muffins would work too.

Cornbread stuffing might be better than regular stuffing.

happy new year sis.
I just sprinkled the fruits on the batter and put it to bake. Nothing else. I didn’t soak the fruits before baking anyway .

Prepared Ji mmiri oku ( yam pepper soup) this afternoon. My husband is from Edo State and he hasn’t eaten the delicacy before. This is my first time cooking it for him. After so many explanations and assuring him he would love it, he decided to eat it. He loved it very much. grin

Ingredients
Black fish
Yam
Pepper soup spice
Fresh pepper
Scent leaves (nchuanwu)
Onion
Crayfish
Seasoning cubes
Salt to taste
