it's using the carbohydrates in the yam sett to grow before the sett rot away,if it's not planted in the soil in order for it to get direct nutrients from the soil it will die off after a while.

Its getting nutrition from the dead tuber. It will die when the tuber runs out of nutrition. It's better you put it into the soil outside to continue growing.

Plants do not necessarily need soil to germinate except for anchorage. This practice of growing plants in solution consisting of only essential nutrients is known as Hydroponics. The yam is able to derive moisture, essential nutrients from the yam tuber itself. The outgrowth typically has some green parts containing chlorophyll through which the plant can photosynthesize. After few weeks, leaf formation could set in. Be cautious, the yam will eventually dry out if the yam is unable to use it's root to obtain nutrients.

It will reproduce a new yam only that the size will be small.

I got two tubers of yam sometimes last year, we cooked the first one, but while eating it, we discovered it was not sweet at all.

Since we can't just throw money away like that, we left the second yam there.

Lo and behold, after some time, the second yam started growing right there inside a tiled kitchen, even without been rooted in the subsoil.
It continues to grow rapidly but without leaf.
I took the picture of it as seen below in December 2021.
(Note: it has grown beyond this level now)
I want to see how far it can grow on the tiled surface in the kitchen.

As I be Architect, my biology no reach that level but I know we have botanist in house who can educate us about what is happening.

I seriously doubt that. Typically, yam takes between 3 to 6 months before a new yam can grow from it. I doubt the tuber has sufficient nutrient to sustain the plant for another 3 months.
