Sad story really. All depends on how concrete U are about how you feel for eachother.
I like things simple and am not one for too much talk. My suggestion would be simpler still.
U guys are already friends so regardless of if she is dating or not dating as long as she ain't married to the guy then nothing stops nothing.
Since it's her last day in the office, take her out asper office-office last supper. Mind you take her out alone so as to prevent distraction. You guys have to concentrate on eachother for effect.
U don't need to bare your soul to her or ask her out, the time for that has past.
