A roadside suya stand is by far, more hygienic than what I'm seeing here.

OP this your explanation is misleading
It is a half truth
It is true some ppl doing for commercial quantity have poor hygiene hence the picture
Akpu is peculiar to IGALA Ppl of Kogi state too
Yes the cassava is soaked in water till fermented
No it does not gather maggot!
Once the cassava becomes soft enough to disintegrate, they filter it like pap into a basin of clean water
After it is filtered with a sieve,it is left to settle just like pap,
then they change the water with a clean one
Akpu is cooked atleast twice before its finally ready for consumption.
A properly prepared Akpu is odorless

While here in Uyo dey will tell you to do transfer and tomorrow they will complain others are using juju that how I bought foam I have to wait till the next day to carry it because the woman did not receive alert and don’t have her account officer contact to confirm.
