There's no way the witness will have access to INEC's AWS EC2 instances Cloud trail audit report. INEC has the burden of producing that evidence to show that there were issues with their application on the said day if they aim to discredit the witness's statement.

But, let's keep in mind this same application functioned as expected for the other 2 elections held simultaneously. I'd fire these bloated SANS if I hired them.

That's where you got it wrong. No one has that except inec. AWS has the overall security infrastructure while inec has access to it's own infrastructure. Apart from inec, it's only by hacking that one can have access to their to their infrastructure. That's the direction the lawyer was pushing her to.
