Pro Tip: If you are thinking of trying this stunt by June, July and early August, Sorry is your name because you will prefer jumping to death than vomiting all your intestine out when the vessel is underway and rolling over the high tides of the ocean....

Secondly, Before a foreign cargo ships departs, The chief officer onboard ensures there's no stowaway onboard, sometimes the vessel rep or company sends a speedboat to go round the rudder compartment to confirm before the engine is engaged.... (Part of departure pre-checklist)

Just pray you don't end being a stowaway on some foreign ships that will make it easy for them to throw you overboard than going through lot of paperworks filling your detainment at their next port of call or paying hefty fines.

No vessel or crew will help a stowaway because its a criminal offense and could get them imprisoned, the best is to report to the nearest flag state of the country for your arrest.

Those that survive the turbulent journeys, how do they do it especially since they would have no means of food or water OR is there plan that when the vessel on high seas if discovered, they'll be helped on board and detained as you've said ?
