Mix some vegetable oil with a little bit of dark soja sauce, honey and a teaspoon of mustard if you want. The mustard is optional. I add it sometimes. Add all purpose seasoning, black pepper, ground paprika and some herbs of your choice (thyme or oregano or Italian herbs mix). Wash the chicken and marinate it. Leave in the fridge over night. Put it in the oven at 390 F or 200C top and bottom heat. Turn after 15 minutes and again after another 15 minutes. Add a little bit of fried chicken seasoning after the second turning for the color. Then bake for another 15 minutes. 45-50 minutes in total. Enjoy!

Add salt to the marinade only if your all purpose seasoning doesn’t contain (enough of) it.

Yes, I did

I saw a youtube video like 2 hours prior to going to the market to get ingredients plus I already know how to make the usual Vegetable without egusi. So I guess it wasn't really different.

The problem I had was not been able to get Uziza leaves cos I don't know who sells and I hate walking around the market.

Uziza leaves tastes really great in Egusi soup.
Next time just ask the Ugu seller where to get it, you may not need to walk around that much.

Your food presentation is nice too.

My ugu seller is my Yoruba pepper plug who doesn’t go beyond Soko, iru, egusi etc.

Uziza is a long stretch. I asked in three places and just turned back.

Thanks

Yeye..

I thought so too until I found the type of garri, way of making it and presentation that works for me.

Arguably the best swallow yet. Perhaps, pounded yam has a rightful fight.
