According to what I learnt a lomg time ago. The hand peeled egusi has a better aroma.

Just the way, grinding tomatoes/pepper with grinding stone vs blending with a blender.

Cooking moimoi with leave vs cooking with nylon/tin can

Cooking soup in clay pot vs cooking with steel stainless pot

Cookimg with firewood vs cooking with gas cooker

Although, I think the hand peeled is neater, compared to the machine peeled that looks kinda dull and still has some husks in them.

Plus, the suffering in the hand peeling, makes the soup sweeter. cheesy

Hand peeled is better cos you have opportunity to inspect and remove the bad ones, stones n sands

Hand finished products are usually more expensive than machine finished products.

Reason is that hand finished products tend to get more attention to details when compared to those done with machines.

Reason why Rolls Royce are expensive and premium is because most of the finishing and assembly are done by hand.

Hand peeled is less of things like stones and also it has its shape unlike machine peeling which might break them due to the mechanical grinding and might contain stones since it's mechanically grinded and doesn't differentiate it even though it's removed before grinding.

The hand peeled Egusi seem to be more delicious because of the germs and bacterial that come with it.

Machine peeled have less of that has heat eliminates most of it.

Hand peeled one is done without heavy pressure or friction while machine peeled is done with heavy pressure.
This heavy pressure causes the egusi to loose its oil (unlike the hand-peeled) which makes it break easily when cooked...

This is just an assumption, it could be that the machine presses the Egusi too hard and squeezes out some of the oil from it in the process. This unnoticed internal thin hairline breakage could also start a fermentation process that changes the taste But the hand peeled ones are gently peeled, thus preserving all the oil and keeps the natural taste.

New or old egusi peeled with machine most times make some one to have running stomach, as the machine easily contaminate the egusi.



While the new or old egusi peeled with hand does not make one to have running stomach often compared to the other

Hand peel has a binding effect than machine-peel which tends to "add more more water" to the soup because it breaks down faster under heat. So, you might not need 'orsu' to make hand-peel thick.

Machine-peel changes taste faster than hand-peel. That's hand-peel last longer maintaining it's savor than machine peel.

The first way to recognize it is the color. Engine melons is creamy in colour while the hand melon(as I choose to call it) is whiter.
Then, when cooked, hand-melon rises(for lack or a better word to use) than engine melon.
Another thing is, personally, if I eat engine melon soup, it gives me running stomach. Reasons I don't eat egusi soup outside.

I also wonder 💭 in fact, I’ve never seen an Egusi peeling machine or how the peeling takes place with the machine.
