About 30 minutes or so
Frying phase now
My electric deep fryer is in the garage somewhere,so is my food processor and a whole bunch of other stuff
We moved house not too long ago and I still haven't unpacked all my stuff
I would have been doing all the frying in my backyard rather than messing up my stovetop

Osisi, are you my twin??! I also made plantain chips for my kids today too. I used half a dozen unripe plantains and had to cut them paper thin.

But yeah, that dish is just something else. I made some more of it yesterday. Didn't know what I've been missing and it's soooo healthy, so thanks again to you and chillisauce.

It really is. Plantain is a complex carb that is rich in iron,it's just knowing how to eat it in a healthy way. My kids like it boiled but I find it too squishy. I used spinach cos I have not been able to go African food shopping.

Will do .but you have the proper boli in Lagos (I guess that's where you are based) joor all join with the dust,fumes( the day hubby analysed roadside food germs I almost fought him angry
