anikeayun:I'll try. I am not good with explaining measurements so it might give you a challenge in the beginning, but as with all things, practice makes perfect. What you need; Dried fish. The big round ones. I don't know what they are called. At least two. 1 titus fish. Iru Okro Ogbono. Already ground. Palm oil. Ponmo, goat meat and whatever kind of meat you like. Ground crayfish. Salt. Now, lets go there; First thing you wanna do is clean your meat and fish and start cooking it. You boil the orisirisi meat separate from the fish. Make sure the water containing the fish is more than enough. You are going to need it as the main base of the soup. Then, pour boiled water in a bowl and put the smoke fish in it. Next is you put some of the ground ogbono in a bowl and add palm oil into it. Not so much that it drowns it but enough to mix it up. It should look and feel like pouring insufficient water in garri. Then either flip the cover of the pot which you are using to boil the meat and place the bowl containing the ogbono on it, or put another pot on your cooker with a little water and put the bowl of ogbono in it. The purpose is to break down the ogbono in order to get a good mix with the oil. Now, blend your okro. What i usually do is I add crayfish and Maggi into the blender with the okro and put it on grate setting. You don't want to blend it too fine. When the meat and fish are done, remove the fish from the pot. You can leave the meat in it's own pot. Add ground pepper into the fish broth and iru, and let it cook for 5 to 10 minutes. Add the meat (without it's broth) and fish into the pot and let it cook for another 5 minutes. Now reduce the heat and add the ogbono ensuring that you are constantly stirring clockwise and counter clockwise. This is where practice and experience comes in to play. You don't want too little or too much fish broth and you also don't want same of the ogbono. Next is the dried fish, which the hot water would have broken down enough for you to clean and then put in the soup. Last to go in the pot is the Okro. You also need to do the clockwise and counter clockwise motion. The okro need not be in the soup for too long before the soup is done. Generally, i switch off my cooker then add the okro. Okro needs little heat to cook plus, it can be eaten raw so there are no health hazards if you are worried about that. IMPORTANT. Notice that i did not say add oil again after the first time you did. The quantity of oil affects the taste and look of the soup. You need as little as possible. Also notice that i said use the fish broth instead of the meat. Fish base is better for Ogbono, Okro and egusi soups. Also notice i did not say anything about salt. I would assume you had used it on your fish base. Your base, no matter what you are cooking, is the most important part of your soup. If you get that right, then you would consistently have a "wow" look on anybody's face who tastes your food. My wife always dances Azonto whenever i am cooking in the kitchen 'cause she knows it gonna be a good day. ![]() |

Have anyone cooked agidi jollof here b4? I tried it today but eh, I need to bandage my arm cos I kept stiring the pap for more than 30mins and it refused to be thick, I shaa tied the white agidi in the leave and it came out fine but the other part I added stew inside , I don't even know the taste is and ut wasnt so thick like the white agidi. But we ate it like that shaa. I forgot to snap pishor. |
