Red Velvet Cake by marylandcakes(op):
Ingredients
350g flour
300g sugar
250ml butter milk
125g butter
ITbsp vinegar
1Tbsp bicarbonate
Red food colour
4 eggs
1Tbsp of cocoa powder

Mix dry ingredients together then mix butter milk and colour together

Cream butter and sugar together add in eggs

Alternate wet and dry ingredients

Mix vinegar and bicarbonate together stir and add to mixture. Mix for 20 seconds and share between 2 cake pans.

Bake in Oven for 30 minutes at 180 celcius.

Can be served with cream cheese frosting.

Yes, but you won't get that very bright red colour, instead it will be a brownish colour.

Thanks for sharing. I always had this impression that it is compulsory to add a little bit of cocoa powder in red velvet cakes. Did you omit it or is this an indication that it isn't compulsory?

Also,what brand of food colour can I use? The gel type e.g. wilton or the really watery type like foster clark's? TIA

It was a typo error, thanks for pointing that out. Yes you will need 1 Tablespoon of cocoa powder. In the video I mixed it in with the flour.

The gel colour is the best one to use. Don't use the watery colours, cos it will be difficult to get that deep red colour and it will change the texture of the cake.

@ Goldmine, You can as well make use of powdered red colour. That's what i use and it comes out nice. smiley smiley smiley

I've tried a powdered colour but it gave the cake a gritty texture. What brand did you use?

I use the preema brand. You see, I reduce the proportion I use. If the recipie calls for 1 tablespoon full, I instead level the spoon and I don't use the gel colour again.

Thanks, but for now I will stick to gel colours cos that's what works for me maybe in the future i might try the powdered one.

one has to be very careful with dry food colouring because it can be mixed with other stuff. paste or gel is generally used.

Nice one poster. I make mine in a similar way, just slight difference in measurement of the ingredients.

The trick in using powdered colour is to use less amount of colour. A little too much will make the cake have bitter taste.

I wouldn't encourage the use of powdered colours.
