What is so bad about the environment. Granted it won't pass muster in some climes but for heavens sake it is the standard of living of those students. The fact there are functional schools serving food is a good enough start. Certainly not the end. When the quality of the kitchen begins to limit the performance of the students then it will be improved.

I know plenty of kitchens and canteens that are sanitary in Nigeria. Keeping a neat environment is not about making somewhere look like someplace else, it is about health and hygiene.

These are not well to do societies and education for them is not a right, but a privilege most cannot afford. That government pays a premium to feed them is so they can be educated so you don't expect the government to construct a gourmet kitchen, employ five star chefs and serve 6 course meals. Be realistic.
