One pot was Cajun seasoned and the other was garlic-butter seasoned.

I’ll go once more to get it out of my system and then I’ll give it a break.

I guess that's one more combination I need to try ....
I also forgot to add pap and bananas, it is delicious plus you don't need to add sugar to the pap 'cause the sweetness from the bananas will do .

The trick is to spare no oil when frying the plantain so it doesn't get burnt..

Actually I like my plantain very ripe, a bit burnt and dark golden when fried.
The egg tomato sauce is appealing though.
