Today na today! Marathon cooking FIESTA for the next week. Rice: Shrimp coconut rice. White rice Native Palm Oil Rice. Jollof Rice Yam: Boiled yam. Beans: Ewa Oloyin. Soups: Fresh fish banga. Egusi. Ogbonor. Okro. Stew. Meats: Beef shank. Kpomo. Oxtail. Cow leg. Goat meat. Shaki Fish: Catfish. Dried fish. Okporoko. Tilapia. . . . . and Mackerel. . . . THE FISH OF THE POOR. . . . :-(only for the kids and the husband) I will fry and keep out of my stew and soups! 2 Likes |

I am VERRRRRRY particular about how I prepare my meat, fish an poultry. I NEVER COOK THEM ALL IN THE SAME POT! Beef shank and oxtail in one pot. Goat meat in one pot. Chicken in one pot. Shaki and kpomo in one pot. I do not use water from shaki and kpomo to cook. I boil it first, throw the water away, then cook again with clean water and salt only. Always soak stock-fish and dried fish to soften. Wash dried fish with hot water and salt to remove the staleness, sand and “creeper-crawlers”!  8 Likes

The hardest part is over.  All the PREPS are ready. Time for a break. Too old to stand for 5 hours cooking. Will resume in 2 hours. Time to figure out what goes in what soup or stew. That na “family discussion”, with lots of diplomacy and democracy! Time to freeze my meat stock, so the fat can settle on top for easy removal. 10 Likes 1 Share
