Procedure on how to prep fried rice abeg
This specific recipe is not our Nigerian fried rice recipe.

1) cook 3 cups of jasmine rice in 3 cups of coconut milk. Add 2 tablespoons of butter and one cube of seasoning while cooking it. When the moisture is dry, it will be soft but not too soft. (Almost cooked per se). spread it in a pan and put it into the oven. Set it to grill on high heat for 15mins while stirring every few minutes. This will make sure it stays grainy and doesn’t get soggy.

2) in a wok/pan, put in three tablespoons of coconut oil, sautée one cups of onions, 1.5 cups of diced ham and 1.5 cups of scallops. While this is sizzling, add one tablespoon of honey and one tablespoon of sugar. This will caramelize and start giving a thick juice with brown coloration as it cooks down. Don’t let it burn!

3) Add two cups of diced mixed red and yellow bell peppers, 3 cups of diced mushrooms. Once these vegetables have softened, add two tablespoons of soy sauce and season to your taste (aka with Maggi if you choose. add spicy pepper at this point if you would like to. And salt as desired)

4) Mix in the grilled grainy rice and coat it thoroughly with the sauce. It takes some time and energy. Then cover and bake for 10 mins in the oven. Taste for seasoning and salt and just as desired.

Serve with your favorite sides.

Tofu is like a protein substance made from soy. You can buy it from any store. I prefer the Asian stores because they have varieties. I like the firm tofu.

1) Cut it into bite size blocks, sprinkle withsalt and put into the oven on very high heat to dry out for about 30 mins. Set aside. Tofu is bland but is a wonderful absorber of flavors so it will soak up the taste/flavor of whatever you cook it with.

2) Grease a hot pan and sauté sliced onions and mushrooms with some curry powder. (This is supposed to be healthy so not too much oil). When the onions and mushrooms are softened, add the cubed tofu, seasoning cubes, pinch of salt and two tablespoons of hot pepper/ginger/garlic paste. (Not two each. But two of the mix).
Pause and enjoy the aroma smiley.

Add frozen or fresh mixed vegetables. Cover and let simmer for 10 mins. Do not add water. The water from the vegetables will be more than enough.

Stir and enjoy with rice, noodles or by itself.
