You have a point. I also feel the yam used for poundo undergoes a boiling (then drying) process. Some brands (especially that Ayoola Ola-Ola brand) have that pounded yam feel and tastes.

The one from Cassava is white, we call it Lafun while those from Yam and Plantain are usually dark or brown.

Exactly, it's the process and that darkness there is actually an indication of iron which is produced during the fermentation and drying of yam. Same as unripe plantain. It doesn't have to be with peels.
My grouse with amala( IMO ni o ) is that without the requisite delicious soup, it is tasteless. I also hate the washing up of utensils after cooking it. Give me pounded yam any day, it's a winner. I guess I am simply an idoma girl at heart.

It's a chemical enzyme called tryosinase that causes that.

The only reason poundo don't turn black is bc it pass through blanching.
Amala is healthier.

I think cassava has a lot to do with the toxic cyanide it contain.

I think that all these tubers react differently. E.g Potatoe darken immediately if not soaked after peeling but when u wash it, the original colour will come back except the highly acidic red and Potatoe u get in the east. If u peel and dry cocoyam for soup making, it changes colour too.

Do u know what cowries are?

This guy will not kill me .

No wonder cococandy was laughing at u.

Cowries are shells used as a means of financial transaction in Nigeria before independent.
It's no longer used but we use them for decorative purposes e.g. clothes and hair, necklace etc. I have like 15 of such I use for hair decoration.
We can still get them at various beaches especially Lagos beaches

That pasta was formed having cowries in mind.

Really? That's different from what I know. 'Gbodo' is the major variety for making yam flour. The yams are small sized. Don't know if you know that.
