Have been offered admission at Griffith college but the problem I have now is that I'm sponsoring myself.
I heard someone saying the school can provide an agent
Who will help me with the documents and even visa processing?

Yes, the school will connect you with an agent if you want. Wait for the official mail from the international Dept. If it's taking too long, you can send a reminder to them.

Cheers!!!

Is there anyone presently schooling in Ireland courtesy of the Government of Ireland International Education Scholarship (GOI-IES)? Can the Stipend paid cover both accommodation and living expenses?

Basically just about 10000 euros towards tuition fee to 60 students across the world.

https://careerwise.ie/what-are-the-it-jobs-in-highest-demand-in-ireland/

WHAT ARE THE IT JOBS IN HIGHEST DEMAND IN IRELAND?
IT is a thriving industry in Ireland, and many multinational companies based here require skilled IT professionals for a huge variety of roles. Whether you are a project manager or a specialist in software design, you will find exciting and challenging jobs to fit your skillset here.

IT JOBS OF THE FUTURE
It can be tricky to decide where to focus your skills in this sector, but if you are an IT graduate or you are re-training to work in this area, you may be interested in the following ideas. These are the top five IT jobs in Ireland at the moment:

1. IT project management. This role currently tops the charts of the jobs most likely to be in demand in the future, and it doesn’t always require an IT degree. If your communication and organisational skills are strong, this might be a good avenue to consider.

2. Software systems developers. A software systems developer creates and modifies software systems, and this is crucial across most industries, including the public sector. This requires a skillset that is likely to remain in high demand for years to come.

3. Data Analysts and Business Analysts

4. Software tester. Since technology has progressed at such a staggering pace in the last twenty years, software testers are in very high demand in many areas. This role accounts for twenty percent of jobs in the IT industry, and is all about locating bugs and identifying problems in new software packages.

5. Technical support. Because users are handling more advanced technology than ever before, comprehensive technical support is vital. Those with the skills to support the customers and users of a product, whether at home or in large businesses, will be essential to the future of IT.

6. App developers. Imagination and creative vision will be a key asset if you are considering app design as a potential career path. Developers are in demand for app development across many industries, including multinational corporations, local companies and even government organisations.

Okay...The documents state that the scholarship covers both Tuition fee plus10k Euros stipends. My concern is would the 10k be able to cover both accommodation and living expenses in Ireland?
if you have 10k Euros for living expenses and accommodation, I think it will be enough for a year. E.g
Accommodation @500 = 6000
Transport @100/month = 1200
Bills & card@100/month =1200
Feeding @200/month = 2400
Miscellaneous = 200

it's only an estimate. If you don't eat out, I see no reason why 200 euros won't be enough for a month. Prices of food stuff & ingredients are not on the high.
