Decided to do something different with my Egusi and it ended up tasting different from the normal one but nice though.

Recipe?
Ingredients: Macaroni, diced carrot, Dried prawn, diced tomatoes(2 pieces), diced rodo( 2 pieces), chopped onions(a small bulb), groundnut oil, curry powder, thyme, seasoning cubes and salt to taste.

Process: Having Parboiled the macaroni, I drained the water and set it aside. No I heat up my oil after which I add my diced carrot and allow to fry on low heat for about 3 minutes before adding the diced tomatoes, rodo and onions. This Iet to fry for at least 5 minutes before adding my curry, thyme and seasoning cubes.

Then I allow it to fry for about two more minutes before adding my dried prawn and salt to taste( please note I usually soak my dried prawn in hot salty water while I'm still parboiling my macaroni. This makes the prawn tender a bit before adding it to the stir fry)

After adding the prawn, the macaroni will follow suit. Now u just have to stir and continue stirring till everything gets mixed up. Now Ur stir fry is ready to serve
