I did experience the same when i bought my RN8. But i switched to eu rom..now i get more than 10hours SOT. You can download the last stable version of miui 11 of eu rom on xiaomi.eu. It has the best battery backup so far.

I want to do this for my RN7.

After downloading the EU ROM for my device, how does one perform the update?

Does it require those twrp and stuff?
or just directly from the updater app?

An advise, if you are not buying in bulk buy from alixpress instead. There is a reason why its "cheaper" on alibaba. You might be paying close to 90-95k if the seller is even honoring a single unit order. Buy from alixpress,if you must order from China.
