I love cooking, I love food, I love cooking food and that is no secret. smiley
Food is me and me is food. I'm a foodie.

what style of cooking I love the most, I haven't decided yet...boiling, frying, sauteing, roasting, baking, grilling...it's hard to choose undecided

So, this thread is kinda like an album created specially for different kinds of food that I make...

The first pastry I'll be sharing are these delicious scones.
They were really deliciously savoury.
I improvised on the original ingredients and they came out really really nice, and crumbly and flaky....

My vanilla sponge cake was super soft, spongy and delicious
I used a recipe that is very dear to my heart...it never disappoints, neither does it fail

We were supposed to eat only half of it in one day, then rest the next day, but it was so good we couldn't hold back, so....

It is hard to please a food goddess like me grin
I'm not moved by fancy restaurants with fancy presentations... Give me rustic and delicious any day

From then on, I told myself that if I ever craved for grilled fish, I was going to make it myself... with my special marinade

You know what I think? People who enjoy cooking are the most selfless kind of people and that is the truth.
You know why? Because they enjoy serving others.
The best thing for a chef is to see others enjoy their food. To them, that is rewarding and fulfilling.
Have you observed that those who cook are most times the last to eat?

Methods

It's super easy.

First, I cleaned my fish by scrapping off the scales, and removing the guts, then I rinse thoroughly, gave the fishes 3-4 marks on both sides, rubbed the fishes with salt and let it drain while I prepared my marinade sauce.
Careful with your salt because fishes absorb salt easily, to avoid it being too salty.


For my marinade sauce, I used vegetable oil, onions, fresh peppers, and seasoning cubes (2-3 for 2 big fish)
First I blended the onions and peppers together, then I poured some oil in a heated pan and fried the onions and peppers mixture, after frying for a little while, I added my seasoning cubes, stirred and turned off the heat (fry on a medium heat to avoid burning)

Even though it's peppered fish, be careful with the amount of fresh peppers you use so that you can enjoy it without your eyes and nose dripping. Use more onions than peppers, it adds sweetness to the fishes.
You can also blend about 2-3 cloves of garlic with the onions and peppers if you want.

Rubbing the fishes.
First I let the sauce cool down, while I lined my baking tray with foil, put the fishes on it, then I used a spoon to scoop and spread sauce all over the fishes. All sides of the fish, including inside the head and stomach, then I let it stay for about 20-25mins to absorb the sauce.
Then, I baked in the oven for about 30mins. I set the oven at 200°c.
Baked/grilled fish is ready to enjoy. smiley

I used croaker fish.
For my marinade sauce I used simple ingredients so that there's no overpowering taste for the fishes to be enjoyed.

ahh, with tears in my eyes I say this. It is not fair ohh. See how u even gave step-by-step devouring photos of the sponge cake. You be making us wish we were your younger siblings now so we could be having some of the good stuff u make. Weldone ma'am. Your hands are blessed.
