It depends on the kind of work I am going to do, if it is something that requires them gaining from my knowledge, I will reject the offer since I wasn't treated well before.

This is just an interview and not a guarantee of a job. The interview might just even be a way for them to get the knowledge they need from you without any job offer.

Sometimes, you can be busy somewhere else when they need you. That is a better revenge

First of all, I don't see the reason for the interview, since you were an employee

Next, bill them professionally, like a new contractor and if possible, don't allow the new person to learn much

If the job requires some technicalities, I think you should take up the contract; that will be another source of your income even if the contract gets terminated after its term. You still stand a chance to get referred to another contract base on your previous job you might have done.
But if the job requires you to directly report to the new employee and working under same condition as before, I think you are better off with another job.

Of course, if they can get over the fact that I was working for them before and treat me as the independent contractor that I am. I could even leverage my past knowledge of the company's operations as a former insider to boost my contract fee.

Its a contract and it comes with agreement if am pleased with the terms I go for the interview and do the job without attaching emotions to it and if am not pleased with the agreement I turn down the interview and offer... Life must go on
