Gari is a creamy-white, granular flour with a slightly fermented flavor and a slightly sour taste made from fermented, gelatinized fresh cassava tubers. Gari is widely known in Nigeria and other West African countries.
It is commonly consumed either by being soaked in cold water with sugar, coconut, roasted groundnuts, dry fish, or boiled cowpea as complements or as a paste made with hot water and eaten with vegetable sauce. When properly stored, it has a shelf-life of six months or more.


The overall potential of agroprocessing is huge. It can reduce wastage, enhance food security, improve livelihoods for low-income groups and empower women.
In sub-Saharan Africa, for instance, it is estimated that 60 per cent of the labour force finds part of its work in small scale food processing, and the majority of them are women.

The production of gari in Nigeria is dominated by women. Gari constitutes a daily meal to some 150 million people world wide. It is a popular West African food. Gari is a fine coarse granular flour of varying texture made from cassava tubers which are cleaned after harvesting, grated, water and startch squeezed out of it, left to ferment and then fried either in plam oil or without.


Types of Gari
There are different types of gari, depending on how it is processed, its grain size and the region of Africa where it is produced.

Gari Is Classifies Into:
• Extra Fine Grain Gari - where more than 80per cent of the grain passes through a sieve of less than 350 micro meter aperture

• Fine Grain Gari - More than 80per cent of the grains pass through a sieve of less than 1000 micro meter aperture

• Coarse Grain Gari - Not less than 80per cent of grains pass through a seive of 1400 micro meter or less than 20 per cent of weight passes through a seive of 1000 micro meter.

•Extra Coarse Grain Gari - Not less than 20per cent of grain is retained on a sieve of 1400 micro meter aperture.

Garri can also be classified based on fermentation length (days and extent) as well as whether palm oil is added to make it yellow or not. Such classifications include:

’Red’ Gari
This is the type of gari commonly found in the Mid-Western part of Nigeria. It is also called Bendel gari. It is made exactly the way described above, but for the addition of red palm oil after grating the cassava and the gari is allowed to ferment for two to three days also. Adding palm oil to the gari further helps to reduce the cyanide content and gives it a unique flavour.

White Gari
Same as Bendel gari, left to ferment for two to three days as well, but red palm oil is not added during processing.

Ijebu Gari
Ijebu gari is made same way too, but allowed to ferment for up to seven days. No palm oil is added. It is also fried to become much crisped. It characteristically has a very sharp taste and less starchy. Many people from the Western part of Nigeria love this and find it great for “soaking”.

How To Make Gari

Gari is traditionally made at home in Africa. It is increasingly becoming common to produce gari in commercial quantities using mechanised means.
Made from cassava, the tubers are harvested, peeled, removing the covering, and the white pulp is grated in a garri grinding machine. Before the advent of machines, the cassava is hand grated.

The grated produce is then put into a jute sack and the sack tied. Traditionally, this is left to ferment for three to seven days depending on the type of garri being made.

This step is very important, as the fermentation process helps to reduce and detoxify the high cyanide content of cassava.

The gari-filled sacks are stacked up on each other, and a wooden board placed below and above the sacks. The wooden boards are tied together with the sacks full of the grated cassava in between. Tension is created by tightening the rope and thus allowing water to run out of the grated cassava being processed.

Usually, by day three, the grated cassava would have lost quite some water and become reasonably dried.

This step is also been by-passed with the use of machines that compress and squeeze water out of the grated cassava.

The water running out is very rich in starch. Collected into a basin and let to sediment, pure raw starch is obtained.


Packaging and storage
The product is hygroscopic (it absorbs moisture from the air) and should be packed in airtight and moisture-proof bags, especially in areas of high humidity, to prevent mold growth.


Market potentials
The market potential for garri is huge and stable. Why? Everyday some African or Nigerian somewhere is consuming the gari product. The market value of gari runs into billions of dollars every year.

It is believed that in Nigeria each family pays about N400 for a five-litre bucket of garri every week. Then the market potential is 22.5 million(household estimate) times N400, which equals N9 billion worth of garri being consumed every week from our open markets.

[Updated at 2:43 p.m. ET] Three people – one suspected shooter and two people caught in a "crossfire" – were wounded in a shooting that appears to have been between two people at the Lone Star College campus in Houston, school spokesman Jed Young said.
The wounded suspect is in custody, and the second gunman is on the loose but not believed to be on campus, Young said.
Authorities believe the school is "under control, but the school is still being evacuated," Young said.
Young said he doesn't know the conditions of the wounded. He said the shooting – apparently between two gunmen – was reported at about 12:31 p.m. CT.
Two apparently unintended targets were shot in a "crossfire," he said.

In 2004, she had a quickie Vegas wedding with childhood good friend Jason Alexander (the "marriage" survived 55 hours). Later that same year, she married Federline; and got divorced in 2006.

News of the break up comes as Spears announced she will not be returning as a judge on Fox's "X Factor. "

"I had an incredible time doing the show and I really like the other judges and My business is so proud of my own teens but it's time in my opinion to get back to the studio, " she said within a statement Friday.

Spears' latest album, "Femme Fatale, " arrived in 2011.

Gigi Chao, the daughter of a Hong Kong billionaire says she had been bombarded with marriage proposals – and even nude photographs – from as far as Nigeria after her father offered £40 million to the man who could woo her.

Gigi Chao, daughter of property tycoon Cecil Chao, entered a civil partnership with her girlfriend of seven years in a ceremony in Paris five months ago.
But Mr Chao, 76, has told the South China Morning Post that reports of his daughter's civil ceremony were "false". He announced the HK$500 million dowry earlier this week.
It has sparked a deluge of offers. Speaking on Thursday Ms Chao, 33, said she had received about 200 proposals and that the number of people following her on Twitter, YouTube and Facebook had jumped by 1,500 since her father's announcement.
"People are contacting me on Facebook, by email, on Twitter. It's ridiculous. I can't sort out the serious proposals from the half-hearted ones. I can't make head or tail of it," she told The Daily Telegraph.
Ms Chao, an executive director of her father's company, Cheuk Nang, said that in addition to receiving enquiries from gentlemen who say they are looking for love and ask her out on a date, she has received some introductions that are less conventional.
Some hopefuls have attached nude photos of themselves or provided information about their financial situations. She has received proposals from all over the world, including Oklahoma, Nigeria, India, Turkey and Bulgaria. Numerous bankers have contacted her.
"Some of them had obviously done their research, you know, gone on my Facebook and looked at my background," she said. "Some of them are quite poetic."
But far from getting angry at her father, she said she was "touched".
"At first I was entertained by it, and then that entertainment turned into the realisation and conviction that I am a really lucky girl to have such a loving daddy, because it's really sweet of him to do something like this as an expression of his fatherly love," she said.
While Ms Chao knew that her father would go public denying the union, she did not know he would offer the reward. "I think the HK$500 million really came as an afterthought."
Even though Mr Chao has not accepted the union, Ms Chao said she loved her father and that they had a good relationship. "It's not that he can't accept me," she said. "It's that he can't accept how society would view me and the status that it would incur. Marriage is still a form of social status. I do understand him. I understand why he's doing this."
She added: "But I don't appreciate getting 1,500 emails."
Ms Chao, who also runs Haut Monde Talent, a model management and PR firm, met her partner, Sean Yeung, who also goes by Sean Eav, while they were working together.
Ms Chao she was drawn to Ms Yeung because she was straightforward, not manipulative, honest, had strong family values and cared about her friends deeply. "I'm very happy when I'm with her," she said.
Ms Chao, who has dated men and women, said she has always been open and honest about her relationships to her family.
However her mother has not accepted her sexuality. Ms Chao recalled that when she told her mother about a relationship with a girl when she was 16 years old, her mother "banged her head against the wall, literally".
Although they have become more visible in recent years, members of the gay, lesbian, bisexual and transgender community in Hong Kong are still largely not accepted by the vast majority of the population.
Ms Chao believes gay rights are picking up, but said work was still needed on the social mentality.
Mr Chao is not so conventional himself. He made headlines in 2003 when his Rolls-Royce caught fire while he and his girlfriend were inside.
The tycoon has never married and once claimed to have had "intimate relations" with about 10,000 women.

Maybe if Romney spent more time talking about that huge middle class concern, it would help him to narrow his yawning empathy gap with the President. I disagree. I believe most readers understand that building a fortune “from scratch” doesn’t necessarily mean that someone started out dirt poor, as did Obama-backer Oprah Winfrey or Romney money man/energy adviser Harold Hamm, who grew up as the youngest of 13 children in a sharecropper family. In fact, I think most Americans get that while a spectacularly successful, creative and driven entrepreneur can arise from any background, a kid’s overall odds of doing well in life are affected by the education and wealth of his parents and the education they can provide to him. In this Pew Research Center poll, 46% said the rich are wealthy mainly because “they know the right people or were born into wealthy families “ and 43% said they’re rich mainly from because “of their own hard work, ambition or education”. Interestingly, that opinion split is roughly the same across all income groups.) There’s nothing wrong with the leg up Gates, Zuckerberg and Romney got from their parents. It clearly didn’t dampen their drive and doesn’t detract from their accomplishments. In fact, it’s exactly what most parents want to do for their kids— give them the best possible shot at reaching their full potential, even if they’re not Harvard material like Gates, Zuckerberg, Romney and President Barack Obama, a Harvard Law grad like Romney. (To totally “equalize” opportunity in this country, we’d have to engage in a level of redistribution beyond what Obama or any leading Democrats have proposed—a level that would indeed undermine the incentives for hard work. KANO – Multiple explosions Wednesday night, hit two primary schools in Jayin and Hotoro Arewa in Kumbotso and Nasarawa local government areas respectively in Kano municipal.

An eyewitness told Vanguard that the attackers of Hotoro Arewa primary school came on a motorbike and hauled explosives into a new story building due for commissioning soon which immediately blew off the roof of the house.

The source further explained that the attack triggered pandemonium and forced night life to a halt as residents scampered to safety.

However, at Jayin primary school located at the heart of Industrial estate phase 2, few vehicles parked within the premises of the school were badly damaged but no damage was done to the building.

The midweek attack on the two pro-western educational institutions is the first of such attacks in the city since Kano came under attack on January 20, 2012.

Meanwhile, no group has claimed responsibility for the attacks but authorities said; “investigations have commenced to unravel the perpetrators”.

Confirming the incident in a telephone conversation with Vanguard, JTF spokesman in Kano Lt Iweha Ikediche explained that “some IED’s went off within the premises of two primary schools last night”

Iweha disclosed that “counter terrorism personnels were deployed to the scene for necessary actions.” He however, refused to divulge further details regarding the extent of damages.

Also confirming the incident, the outgoing spokesman of the Kano State police command, ASP Magaji Musa Majia revealed that “few cars parked within the premises of Jayin primary school lost their windscreens.”

He however, assured that the Command will in due course issue a comprehensive details about the incident.

The escape of Umar Kabir, aka Kabir Sokoto, the alleged mastermind of the Christmas Day bombing of St. Theresa’s Catholic Church, Madalla, near Abuja, which caused the death of over 43 persons and left many others injured, no doubt, dealt a heavy blow to the already saggy image of the police. The force, which has a long history of failure to resolve high profile cases, might find it more difficult to gain the confidence of the populace.

Even with the sacking of the Inspector-General of Police, Hafiz Ringim, whose era orchestrated the escape of the high-profile suspect and the lingering Boko Haram insurgency, the task of reclaiming public confidence in the force remains a mirage. There in lies the enormity of the challenges faced by the new police helmsman, Mohammed Abubakar.

Kabir Sokoto was arrested alongside an unnamed serving military officer at the Borno State Governor’s Lodge in Asokoro District, Abuja. The suspect reportedly escaped from police custody few days after his arrest. Reports said the police commissioner handling the investigation, Mr Zakari Biu, detailed five policemen to take the suspect to his apartment in Abaji, a satellite town in the Federal Capital, for routine search.

The policemen were said to have been attacked and overpowered by suspected Boko Haram members and Umar, in handcuffs, escaped. The reported escape of the suspect and the circumstances surrounding it bore, glaringly, the taste of a Hollywood drama, given the fact that a truck load of policemen was used to effect the arrest while only five policemen were later sent to search his home. This has shown the laickadaisical attitude of members of the force to official duties.

The consolation today is that IGP Abubakar has a hostory of calling his men to order. Once when he was arrested by his own men for no offence in Lagos at a time he was their Commissioner of Police, Abubakar ensured at the end of the day that policemen should not see themselves as being above the law. And upon assumption of office, he read the riot act, making it clear that professionalism and correctness should be returned to the force.

In the past, the police have shown a terrifying degree of coldness while investigating high profile cases, mainly when it affects one of their own. One of the cases often cited is the Apo Six killing, in June 8, 2005, where some policemen in the Federal Capital Territory, FCT, killed five boys, all said to be motor spare part traders at the Apo Mechanic Village and a lady said to be returning from a club when they ran into a road block mounted by the police.

Nothing meaningful was achieved throughout the investigations. The suspected perpetrators of that heinous crime were openly identified. The trial has been at the FCT High Court presided over by Justice Isaq Bello since 18 January, 2006.

While the case was still under investigation, one of the major suspects disappeared mysteriously from police custody. His disappearance caused a stir but till date his whereabouts are not known.

Reliable police sources disclosed that the pattern of escape is always the same with cops accused of misdemenor who usually end up being posted to remote areas of the country where nobody will find them. Those of them that come from the north normally end up being posted to the remotest areas of the region or the towns close to our neighboring countries.

Same also goes for those from the south. In extreme cases, the cabal in the force will ensure that the escapee ends up in one of the neighboring countries like the case of the officer that allegedly ended up in Niger Republic after the Apo Six incident. Shockingly, such suspects have been alleged to be drawing their salaries and other benefits.

A similar incident took place in December, 2010. The divisional police officer (DPO) in charge of Olosa police station, Mushin, Lagos, allegedly shot and killed a middle-aged man, Femi Best, in front of Onipanu police station, along Ikorodu Road. After his highly publicized arrest and assurances from the force that justice will take its course, nothing was heard about it till date.

While Lagosians were still grappling with that, another DPO, in charge of Pen-Cinema police station, Shegun Fagbumi, allegedly shot and killed a young man, Ademola Aderinde, during the protest against the fuel subsidy removal at Ogba area. The family of the deceased are alleging attempts to cover up the case but police authorities are denying.

Another heartrending case took place in the university town of Nsukka, Enugu State, about five years ago. The DPO in-charge of the town, one chief superintendent of police,CSP, Seriki, reportedly arrested two secondary school students who were on errand for their parents for wandering.

He allegedly took them to his station and clamped them into cell in spite of their persistent pleas that they were running errand for their family. No efforts were made to contact their parents or verify their claims. Even when their parents got hint of their arrest and rushed to the station to iron things out, the DPO objected to their release.

The following morning when their distraught parents came to take their wards home, they were shocked to hear that police could not tell their whereabouts. Few days later, the dead bodies of the school children were discovered in shallow graves 20 kilometers from Nsukka town. This sparked protests in the town after it was found that the students were taken to a nearby town and killed in the midnight while vital parts of their bodies were removed.

The DPO and all those that allegedly took part in the criminal act were rounded up and detained.

While people were still anxiously waiting for their prosecution, stories filtered out that the same suspected DPO was promoted to the next rank. Later, the DPO was said to had disappeared from cell. The father of one of the murdered students died on hearing that the DPO had disappeared.

Though there were stories of award of N5milion to the families of the dead students later by the court, the fact remains that the DPO evaded justice.

Now that a fresh case has reared its ugly head, the police officers that allegedly aided the escape of Kabir Sokoto including Police Commissioner Zakari Biu are said to be under house arrest. Although the bombing suspect has now been arrested, but the officers allegedly involved in the case still under house arrest, this has brought to the fore the urgent need for the acting IGP to re-visit all such cases of indicted police officers escaping from custody by setting up a special investigating team made up of policemen, members of other security agencies and even journalists.

This will go a long way in showing that not only justice will be done but it will also project a different policy thrust of the new police administration. This will be quite distinct from the usual parlance of marshaling out ten, six, seven or even twelve-point agenda which had typified all police administrations immediately after a new man takes over as IGP.

More than 3000 youths from the Niger Delta, South East and the Middle Belt yesterday stormed the residence of departed Igbo leader, Dim Chukwuemeka Odumegwu-Ojukwu, on a special condolence visit and procession just as former Niger Delta warlord, Mujahid Dokubo-Asari, declared that Ojukwu’s struggle for Biafra was right.

The group under the aegis of the Coalition of Nations and Organizations of Nigeria was billed to hold an all-night meeting at the national secretariat of Ohaneze Ndigbo in their resolve to effect a re-union of the ethnic nationalities.

Speaking when the youths paid a condolence on Lady Bianca Ojukwu, Dokubo-Asari recalled how many of his family members were killed and massacred for their support for Biafra.

Said Dokubo-Asari: “Today, if anything will stir me to fight, it is my belief that Biafra was right. When I was growing up, we were told a lot of things to hate Biafra. Maybe some of us were persuaded. But the more I grow up, the more I realize that it was the greatest mistake we made for not allowing Biafra to stand,

“You might not feel the pain that I feel, but if an Igbo man does not feel the pain that I feel, I am sorry for him. If an Urhobo man doesn’t feel the pain, I am sorry for him.“What Ojukwu lived and died for, in the coming years, we will see it with our eyes because of the arrogance of a few people that were born to rule, and everybody accepts it. When you want to talk they say leave them alone. Why should I leave them? If you don’t bend your back, nobody will ride you.

“For the first time in history, the divide and rule tactics of those who have kept us down failed and the Igbo voted more for President Jonathan than the people of the South-South.“Our gathering today is to bring the gathering of the dispossessed and oppressed people of the Middle Belt, Ndigbo people and the people of the Niger Delta together and we are going to move like a force. “Let nobody be apologetic. What we want is political power. Political power is the key to our development and our dignity, and political power we must own come 2015. If President Jonathan says he is not contesting, we must hold on to the presidency. Either an Igbo man takes it or someone from the Middle Belt, we will continue to hold it.”

Earlier, the leader of the team and president of the Ijaw Youth Council, Miabiye Kuromiema, said they were in Ojukwu’s residence to draw inspiration from the late Igbo leader’s rich legacy of courage and desire to see that Nigerians are given a place of dignity and respect. In her response, Mrs Bianca Ojukwu thanked them for the visit and respect to their departed hero, and urged them to be strong in their determined effort to effect a change in the country.

Three policemen attached to the Igando Police Division, allegedly killed two drivers at a road block for refusing to give them a bribe in the early hours of Wednesday.

The development came less than a week after the Acting Inspector General of Police, Mr. Muhammed Abubakar, ordered that no policeman should mount any roadblock again.

It was learnt that after killing the drivers who were staff of Multiple Covenant Investment Limited, the policemen labeled them robbers.

It was gathered that the victims were on their way to work on a motorcycle and were flagged down by the policemen who demanded money from them but they refused to part with any money.

It was learnt that they were about to speed off, when one of the policemen was said to have opened fire. The bullet perforated the back of the man on the passenger seat and burst out from his front and entered the back of the man who was riding the motorbike.

The victim on the passenger seat was said to have died instantly, while the rider was still alive.

According to reports, in a bid to cover up their crime, the policemen took the corpse and the other victim, who was seriously injured, to their station where they were labeled armed robbers.
