I hope you enjoyed Part 1 I'm back with more reasons why your Jollof rice does not come out right. who's ready? 1. You are not using enough oil. I know you don't like it when your rice has too much oil when it's ready, but for the sake of frying your tomato paste and blend, you will need to use enough oil. You can always reduce the oil before you add your rice. We talked about properly frying your paste in the last post and you need enough oil for that to happen. 2. You are overthinking your seasoning. add your seasoning in moderation. don't overthink it. Invest in some bay leaves. It adds a nice touch of flavor to the dish. 3. You put too much water in your rice. Especially those of you that cook in high heat. When you put too much water, the rice reduces in flavor, color, and taste. plus the high heat that makes it dry without properly cooking and then you add even more water. My advice. start with moderate water and use medium heat to make it cook properly. invest in some foil paper; this helps trap the steam in the rice so it cooks even better. Hello, thanks for the question . when it fries well, it usually starts looking like bread crumbs (tiny pieces), fry for at least 10 mins and your fire should be on medium heat not high heat if not it'll be burning unnecessary. Hope this helps Kobojunkie: |

Do you feel like whenever you cook Jollof rice, It just doesn't come out right? Here are 3 things you may not be doing that makes it not come out well. 1. your Tomato to Tatashe to onion ratio is not right Do you even bother to use tatashe? well, tatashe is important. secondly, the tatashe should be more than the tomato. and use enough onions (don't manage onions). trust me. 2. You don't let it burn. I did not say to turn it to black jollof o. just don't remove it immediately the water dries up. Let it stay for a few more minutes. Let the paste enter well 3. You are not frying the paste well. My brother, my sister are you scared of frying your paste? Do you see that tomato paste?, fry it very well before you add the tomato/tatashe/onion blend. and allow it to fry well too. Are you a Jollof expert? Boil your chicken in a pot with your seasoning and little water, and allow it to cook for 15mins. after its cook, separate the chicken into a dish and the broth into a bowl in a separate bowl, put in your boneless chicken and season with garlic powder, Maggi cubes, thyme, curry, and paprika. mix and let marinate for a while. in another bowl, mix your veggies (carrot, sweet corn, green beans, peas, green pepper) and season with a little thyme, curry, garlic powder, salt, and Maggi cubes. and mix well. in a pot, add a small amount of vegetable oil, and let it heat. add your thoroughly washed rice and fry on high heat for 3 mins while continuously stirring. Then add your chicken broth and water. cover and let cook remember our boneless chicken mix, time to fry. Fry properly in a clean bowl with oil and take out of the pan. In the same pan, add your clean prawns and fry for about 3 mins take out the prawns when done and in the same pan add your garlic and ginger paste and some onions. let it fry a little. then add your mixed veggies and boneless chicken mix we made. stir and fry taste for seasoning and slowly add your cooked rice to the veggie mix in the pan. add in batches add your spring onions and prawns and leave to simmer for a few minutes and that's it.
