In this post, I’ll be showing you how to make one of the very first cookies I ever baked. I was taught this particular cookie by late Mrs Gravendeel whom I call “Mama” [May her gentle soul rest in peace]. She was the one who inspired me to learn how to bake and also showed me how to bake some cookies and Cakes. I miss her a lot.
Well before we get started, I’ll like you to get the following ingredients…

Ingredients:
· Oats
· Flour
· Baking Margarine / Butter
· Eggs

· Baking Powder

Method:
125 grams Baking Margarine / butter + 120 grams Sugar } Mix Well
250 grams Oat + 2 eggs } Add to the butter and sugar mixture, and mix well
1 ½ Cups Flour + 1 teaspoon Baking Powder } Mix well and add to the mixture.
Mix the whole mixture well and make into small round ball [ maybe the size of a walnut] and flatten top with a fork. [Any other shape will do].

Bake on 200 C until it becomes golden brown [about 20 – 30 minutes]. Allow to cool, then serve. Tastes Great!

· Bananas
· Shortening [Butter]

Method:
1 cup shortening [Butter] + 2 cups sugar } Cream together
6 ripe Bananas [Big ones] ---- Peel, Mash well and add
4 eggs ---- Add 1 at a time to the mixture, beating well
2 ¼ cups flour + 1 teaspoon salt + 2 teaspoon soda + 1 teaspoon allspice + ½ teaspoon ground cloves + ½ teaspoon nutmeg } Sift Together and add to the main mixture.

Mix and spread into two 8 × 4 inch loaf pans. Bake in 350 F oven for 45 – 50 minutes [ 1 cup of chopped nuts can be added if you wish]. Tastes Great!!!!

Today, we’ll be looking at how to make the Steamed Bean Cakes also known as “Moi-Moi” or “Alele". This is a bean meal mostly made and eaten by Nigerians. It is a very delicious and also very nutritious meal. Well, Enough of the talking, so let’s get started...

· White beans
· Onions
· Tomatoes [fresh and paste]

· Red pepper[fresh]
· Oil [groundnut or palm oil]
· Egg
· Salt
· Optional [Maggi cubes, Curry powder, Corned beef, Liver, Fish, Crayfish, Shrimps]

Method:
1 ½ cup white beans } Soak 15-30 minutes, clean and remove skins. Grind, adding enough water to make it easy say about 1/3 cup. A liquidizer [blender] may be used for this process.

2-3 small onions + 1 large or 2 small tomatoes + red pepper to taste } Grind or liquidize and add.
Beat the beans fluffy, adding ¾ - 1 ½ cups hot water. Beat well.

1 or 2 teaspoon tomato paste + 1 egg whisked [well beaten] } Add.

Add about 1/3 cup groundnut or palm oil --- Palm oil should be clear in colour. Add oil until it is visible, the mixture showing a shiny appearance.

The above are basic ingredients, you can also add 2 maggi cubes, ½ -2 teaspoon curry powder heated with the oil, up to ½ tin corned beef. Some people like to add some dried fish or crayfish, or bits of liver, or sliced or chopped hard-cooked[that is egg cooked for 10 minutes and above], or chopped shrimps. Add salt to taste.

Grease molds [peak milk tins would do] and fill them, allowing room for expansion. Cover with foil and set in pot, with water about 1 inch deep around them. Cover the pot tightly, and steam about 30 minutes.

Then Enjoy!! It goes well with Pap [Akamu] or Jellof rice.

Hello, in today’s post, I’ll be showing you how to bake one of my very favorite cakes, that is, the Fudge Cake. So, if you are ready let’s get started. First of all, get the following ingredients:

Ingredients
 Margarine
 Eggs
 Sugar
 Vanilla
 Flour
 Baking Soda
 Baking Powder
 Cocoa Powder

Method
¼ cup margarine and 1 ½ cup sugar} Cream together.

1 teaspoon Vanilla and 2 eggs} Add and Beat well.

2 ¼ cup Flour, 1 teaspoon baking soda and 1 teaspoon baking powder}Sift together and add, alternatively with milk below:
1 cup sour milk (1 tablespoon lemon juice or use part yogurt) }Add alternatively with flour.

1/3 cup hot water, ½ cup cocoa and ¼ cup margarine}Mix in small bowl, then add to cake batter.

Then pour into greased 13 × 9” loaf pan, or into 3 layer cake pans (8” or 9”). Bake at 350F or 180 C. The loaf can stay for 50 minutes and the layers for 30 minutes.

When done, cake will shrink from the sides just enough to allow space to slip a knife between cake and pan; a finger touched to top surface will not leave indentation; cake will “hiss” very softly ; a straw or toothpick inserted will come clean.
