Great review on honey Sir. But as someone that has been in this business for almost a year as at today, I bet to disagree with your first two points on "how to detect adulterated honey".

1) pending on mode of production, as a result of slow or poor combustion, the burning process may not be complete, leaving room for excess oxygen to be looking for how to escape. IT BECOMES A PROBLEM when the honey has began to FERMENT. At this point, the air bubbles will be much to a point whereby it can cause expansion of the container.
