Great review on honey Sir. But as someone that has been in this business for almost a year as at today, I bet to disagree with your first two points on "how to detect adulterated honey".

1) pending on mode of production, as a result of slow or poor combustion, the burning process may not be complete, leaving room for excess oxygen to be looking for how to escape. IT BECOMES A PROBLEM when the honey has began to FERMENT. At this point, the air bubbles will be much to a point whereby it can cause expansion of the container.

2) honey harvested during rainy season CANNOT be as thick as the one harvested in dry season. The simple reason is because, rain droplets must have come in contact with the bee wax, especially if it's outdoor farming. NEVERTHELESS, honey should not be watery.
