i have seen this kind of coconut many times, there is nothing strange about it
it is the one that is about to germinate. To confirm it, take a coconut and put it on the soil/ground for a month or there about and after you try to break it, you will find seed on it, showing that it is about to germinate, it happens when the water dried off and after that, germination will take place

The coconut is so so harmless though a rare occurrence, the coconut is already germinating for Christ sake. Please next time just remember that Google is your friend and do not create unnecessary alarm.

When a coconut germinates, the "coconut water" begins to form that mass, which will be the nutrient source for the coconut seedling till its roots become well formed for tapping nutrients from the soil.

Any coconut that is due to germinate can grow such seed inside

lactemps: There is a possibility of that happening. The Coconut either overstayed on the tree or when it was cut off.
There may be little or no water in it, 'cos the water has been used to 'initiate' the re-growing process.
