Ofada rice and stew is Nigerian meal native to the Yoruba's food but in recent time,everyone,especially those in Lagos and environs,has been bitten by the Ofada Rice bug.
Cooking the Ofada Rice is not very interesting,it is not as posh as the long grains parboiled rice.The "best" part,it has this strong pungent smell when it is being cooked yet everyone wants to eat it!.I guess it is because Nigerians have a penchant for all things traditional and home grown ,we have a sense of pride in all things Nigerian that we can call our own. Or
maybe it's the stew because i must say the Ofada stew added a delicious twist to Ofada Race
okay, let start to cook the stew
Ingredients for ofada stew.
=> Red Atarodo 250g
=> Red Tatashe 400.
=> Red Tomatoes 600.
=> Red Shombo 450g
=> 45g pie unripe babanero pepper
=> 150g Green pepper
=> 25g Locusts bean seasoning or iru ogiri or okpel or dawadawa
=> 250cl of red oil at last
=> 20g Big onion
=> 3 handful gray fish
=> 250g assorted meat
=> 240g Cow tripe
=> 200g Dry fish
=> 150g Stock fish
=> 1 Rot of ginger
=> 3 pices of garlic
=> 4 level of tea spoon of salt
=> 2 cubes of maggi
=> 2g of tyme .e.t.c
Do you know that before you cook the stew, you.sort things you need to arrange something down so that you can enjoy what you are about to cook so
NOTE: you need to arrange down this.
Firstly you need to wash your pepper like that atarado, red shombo, red tatashe, red tomotoes,green bell peppers and then fresh garlic and ginger.
when you are through with washing,grinding it,dont let the pepper to be smooth when they are grinding it for you.
then boil it like that when it build,place it aside.
secondly,your assorted meat,dry fish and pomo and stockfish and cow tripe, cut it small pieces and wash the seasoning it with thyme,salt and maggi but dont add currye.t.c dont forget to slice the onion to it over it and boil it to cook,it is down,put it aside.
Thirdly, chopping your locusts and the gray fish together,when you have done all this
...pour the red oil into a clean clay pot and bleach it till the colour changes and should cook like vegetable oil when done but it will take you 15minutes on low to medium heat to bleach.as shown in the picture below. your own time may vary depending on the type of heater you have and the quantity of oil.
...leave the oil to cool down a bit then add the boiled pepper,let it fry till the water has dry from the pepper.
...add the gray fish,locust beans seasoning you chop then add all the meat assorted you boiled,add the stock water that comes out when boiling the meat then cover it to steam for about four minutes,stir it and taste it,if it need salt
add a small salt to it to taste,leave to simmer and it is ready to be served.

@op...have you ever cooked this food, or you just copied a blog? . how come the ingredienys listed are not same as ingredients used in the procedure.... welll I'm not against what you have done, but you should have done it appropriately
