Fresh cow milk is simply this: cow milk right from the dairy farm which still has all of its original vitamins, minerals, protein and enzymes still intact. It is totally different from conventional milk (powdered milk, evaporated milk, condensed milk, UHT milk etc) whose most of its nutrients are lost and replaced with synthetic ingredients.

Butter is a very nutritious dairy product that is hard to come by in our grocery stores. This is because it's main ingredient, fresh raw cow milk, is not readily available in Nigeria for its production. Hence, most of our people think the word butter is another synonym for Margarine, thinking they are the same thing. Unlike butter, Margarine is made from vegetable & synthetic fats. And some margarine manufacturers have capitalized on people ignorance and butter scarcity by advertising their margarines as "butter" – you hear people call cooking margarine "cooking butter". With fresh from the farm cow milk, you can easily and cheaply make butter for personal or commercial use.


HOW TO MAKE BUTTER FROM FRESH COW MILK

1) Step 1: Separate the cream from the milk. Let your raw milk set in a clear container for at least a day in the refrigerator until you can easily see a distinct cream line on the top. Two days should be enough for the cream to separate from the milk.


2) Step 2: Using a dipper, skim the cream off the top. From one whole gallon of raw milk, you can expect about 2 - 4 cups of cream — sometimes more, sometimes less. Pour the cream into a glass jar with an accompanying lid.


3)Step 3: Let your cream ripen or culture (optional). You don't have to let your butter culture, but if you do, you'll get richer, more flavorful butter.


4)Step 4: Agitate the cream until butter solids separate from the buttermilk. If your butter is in a sealed mason jar, agitating is as simple as shaking the jar back and forth, for anywhere from 5 to 15 minutes. You could use a blender to speed up the process.


5)Step 4: Pour of the buttermilk which should have separated from the butter. Save the buttermilk. Buttermilk is a very nutritious dairy product not readily available in the market. It could be used for drink, use in cooking or baking.


6)Step 5: Wrap the butter in a woolen cloth. When covered completely with cloth, run the butter through a bowl of cold water. This process will "clean" the butter, further separating any cream from the butter solids to achieve a richer butter.
