I HAve over ripe plantain that i can no longer fry cos they ve gone so soft, pls who can help with the traditional "ukpo-ogede "recipe.Its a nigerian dish that looks like moimoi only that it is made with overripe plantain and some ingredients.This is the much i know of it.My mum used to make it when i was very small ,

thanks a lot tpiah, i think its the recipe but i know that a bit of corn is usually added to it.I ll try it and see how it turns out, really grateful

no corn is added.

my mom uses dried green plantain flour

very riped plantain mashed in mortar

p oil, crayfish, pepper, etc

this is the first food i will eat if i ever land nig

I am from the Ibo speaking part of Delta State and ukpo- ogede or plantain pudding is one of our traditional meals.Adding a lot of pepper with some Red Kidney Beans puts a whole new twist to this meal.It's very delicious.Other tribes add corn to it but this is the delta version.

Ingredients-
1-Very ripe plantain blended to a pulp
2-unripe plantain flour
3-Palm oil
4-Fresh tomatoes,pepper,onions and crayfish
6-Red Kidney Beans(You can get this at the supermarket or grocery store)
Salt to taste
The listed ingredients can be adjusted to one's personal taste but the blended ripe plantain and the plantain flour should be of equal or nearly equal proportions.


Method
Set a pot with a low level of water on heat.Prepare your wrappers.If you can't use the traditional leaves,you can use little plastic containers or little nylon bags to wrap your pudding.
Blend ripe plantain with tomatoes,pepper,crayfish and onions to a soft consistency with water  and set aside
In a deep bowl,mix plantain flour with palm oil thoroughly, add blended mixture and mix together.
Add salt to taste and lastly add the red kidney beans.
Mix very well and scoop into the containers or little nylon bags.
Note that the consistency should be slightly thicker than that of moin-moin.
Cook for 30 to 40 minutes.
You can tell it's cooked when it's colour changes to a dark brown.

my mom cooks hers without tomatoes but pepper. also wrapped in leaves. honestly Ukpo Ogede is one verrrrrrrrrrrrrrrrrrrrrrrrrrrrry delicious meal. i love it the most when i eat it the next money. usually she cooked it at night time. grin

@uk dream, when you say red kidney beans is it cooked? or uncooked? or is it the beans flour you refer to? i suppose you mean the normal beans we eat in Nigeria?

@op, Ukdream have given u the right ingredients and procedure. The red kidney beans is the one u normally add to salad but u can omit it if u like. The flour is not beans flour, it MUST be unripe plantain flour; u can buy it in the market just like u buy your semovita or yam flour or better still u can prepare yours if u have the time.
The plantain flour should be more than the ripe blended plaintain that way after it is done, it will be a well solidified and taste well. [b][/b]DO NOT ADD MEAT, FISH OR EGGS.
It was just two days ago we started drying unripe plantain pieces for grinding. Probably by weekend i will make plantain pudding (ukpo ogede).

Plantain pudding is a very rich and delicious food.

Thanks @ preet cindy>..my question was probably lost in translation grin..what i meant to ask is if the kidney beans is added as the delta versio above says to add after blending the other ingredients>>>so i guess it should not be blended with the other stuff...Thanks
