Pwettymom:Direction 1. Place a pot on medium heat, heat up oil. 2. Add in sliced onion. Fry until slightly browned. 3. Add in tomato paste. Stir fry. 4. Add in pepper mixture. Stir-Fry. 5. Add in stock, seasoning cube and salt. 6. Stir in drained washed rice . 7. Leave to cook for 30 mins. 8. Stir in butter, sliced tomatoes and onions. 2 Likes |

Pwettymom: For your red party jollof rice, your tomatoes and your tatase should be equal parts, blended with red chilli peppers ( sombo) and a big onion . The next step is to cook the blended mixture till it's almost dried of its fluid content . Heat up your oil for cooking, fry the mixture for some few minutes ( since you've already precooked it, it shouldn't take much time) Add your tomato paste, stir continuously to avoid burning. By now the stew should be void of liquid and the oil already red. Pour in your chicken stock. Add your thyme. Throw in some bay leaves, 3-4 will do( use sparingly ) Crush in your seasoning and stir. Add your parboiled rice and stir ( or you can use hot water to wash out excess starch from your rice ) Now go ahead and add enough water a little bit above the level of the rice, add salt to taste and stir. Cover your pot and allow to cook on a medium heat ( if the heat is too high, your rice will get burnt before it cooks...you don't want that ) Keep checking on your rice and add water little by little if need be. When your rice is finally done, it's time to stir with a wooden stick or spatula...this is the stage I like to add my Curry powder and also balance for salt if need be Keep stirring on a low heat depending on how dry or saucy you want your rice to be...you can also add your garnishes at this stage if you like ( my favourite garnishes for are green peas and sweet corn with white onion ) Your red party jollof rice is ready ! ![]() Below is the one we made for Christmas ![]() 4 Likes 4 Shares

PhenomenalMorgan:The best spices to use for your jollof rice are curry powder, dry thyme, bay leaves. I've heard about using smoked paprika powder, but I've never tried it. For seasoning, I use knorr chicken cubes because it gives my jollof rice the desired taste that I like . As for quantity, that depends on the quantity of your rice . |

A friend taught me how to prepare party jollof rice in school and my rice used go come out great then. Now it just looks and tastes like concoction. Dunno what I'm doing wrong. |
